Homemade Cheesecake... I Need a receipe thats tried and true
We are having our Thanksgiving tomorrow evening.
I want to make a nice cheesecake from scratch and don't want to just pull a receipe from the net. I wanna know someone thats made it and ate it.
I'm gonna try.... someone please give me their receipe and tips ?

Cheesecakes:
Pumpkin Orange
3/4 cup graham cracker crumbs
2 tablespoons butter or margarine, melted
2 (8-ounce) packages regular or light cream cheese, softened
1/2 cup regular, lowfat or nonfat ricotta cheese
3/4 cup firmly packed brown sugar
1 1/2 cups LIBBY'S® 100% Pure Pumpkin
3 tablespoons orange juice
2 tablespoons NESTLÉ® CARNATION® Evaporated Regular or Fat Free Milk
2 teaspoons vanilla extract
1 1/2 teaspoons pumpkin pie spice
1 teaspoon grated orange peel
3 large eggs (or 3/4 cup frozen egg substitute, thawed)
Topping (recipe below)
PREHEAT oven to 350°F (175°C).
FOR CRUST COMBINE graham cracker crumbs and butter in small bowl. Press onto bottom of 9-inch spring form pan.
FOR
CHEESECAKE BEAT cream cheese, ricotta cheese and sugar until creamy.
Add pumpkin, orange juice, evaporated milk, vanilla extract, pumpkin
pie spice and orange peel; beat until well blended. Add eggs or egg
substitute and beat just until blended. Pour into crust.
BAKE for 60
to 65 minutes or until edges are set but center still moves slightly.
Cool in pan to room temperature on wire rack; spread with Topping.
Refrigerate for several hours or overnight. Remove side of spring form
pan.
FOR TOPPING COMBINE 1/2 cup regular or light sour cream, 1
tablespoon granulated sugar and 1 teaspoon orange juice in small bowl.
Makes 12 servings.
Cranberry:
Topping:
1 cup granulated sugar
2 tablespoons cornstarch
1 cup cranberry juice
1 1/2 cups fresh or frozen cranberries
Crust:
1 cup graham cracker crumbs (about 14 squares)
3 tablespoons granulated sugar
3 tablespoons butter, melted
Filling:
4 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 tablespoons all-purpose flour
4 large eggs
1 cup purchased eggnog
1 tablespoon vanilla extract
Preheat oven to 325*F (160*C). Grease a 9-inch springform pan; set aside.
In a saucepan, combine the first four ingredients; bring to a boil. Reduce heat;
cook and stir over medium heat until all the berries have popped open. Remove from heat; set aside.
In a small bowl, combine cracker crumbs and sugar; stir in butter. Press into
the bottom of prepared pan. Bake for 10 minutes. Cool on a wire rack.
In a large mixing bowl, beat cream cheese and sugar until smooth. Add flour and
beat
well. Add eggs, beating on low speed until just until blended. Add
eggnog and vanilla; beat just until blended. Pour 2/3 of the filling
over the crust. Top with half of the cranberry mixture (cover and
refrigerate the remaining half of cranberry sauce). Spoon the remaining
filling on top.
Bake for 60 to 70 minutes or until center is just set. Cool on a wire rack
for
10 minutes. Carefully run a knife around the edge of pan to loosen;
cool for 1 hour longer at room temperature and then refrigerate for
several hours or overnight.
Remove sides of pan. Spoon remaining cranberry mixture over cheesecake.
Makes 12 servings.

Now I'm looking for a quick/easy one for brown gravy from the drippings.
I can make milk gravy good but have never tried the thin brown gravy before. I don't even know what or how.

I have an easy cheesecake recipe that everyone has always loved. One package of cream cheese, softened. Mix with 1 cup sugar. Add 1 tsp. vanilla. Gently fold in about 2 cups (up to the whole container) coolwhip (defrosted). Ta da! Pour into no bake graham crust. Chill until ready to eat.
2 pk cream cheese
1 egg
1/2 c sugar
1/2 ts vanilla
I just buy the crust, but you can make it, crush the crackers, as butter (REAL BUTTER) make it pasty, not amount, just add until it is thick and can be mashed into the side of a pan.
Back at 325 for 35 to 40mins. Ad toppings or not, great either way (oh yeah, let cool for at least 2hrs in the fridge)
We make the one on the package of the Phlli Cream cheese. It is very good and very easy to make.
