I'm doing research on possible further education today since I really have no college whatsoever except what the military gave me for basic, tech school, and my job. Anywho, I LOVE cooking and decorating cakes. So I have been looking into going to a culinary academy. What can I expect from it? Is there homework? What exactly do you do there? Any information would be great!

I graduated from The Art Institute of Atlanta in 01'.
This is a portion of the classes I took:
Basic class- knife skills, terms, etc..
Sanitiation/safety- diseases, food borne illness, hand washing..
International cuisine- Greek, Indian, Chinese, Italian, Morrocan, etc.
Baking- Pastries, cakes, terms, etc..
Management
Cost
A la carte- class to graduate- run the school dining room/kitchen
Beverage- wine, waters, beer
Regional- Southern, Midwest, Northern, Pacific Fusion, Southwest
We did have written tests in every class, so you did have to study. There were also cooking/baking exams.
In my basics class we were given a grab bag and we had to cook off the cuff so to speak. I was given a chicken drumstick, and a couple of other items. I deboned the chicken and stuffed it and baked it. I got an A...
I graduated with a 4.2 GPA. I interned at a restaurant that I was already working for and was given a Pastry Chef position before graduating actually. I then went on to own my own catering business before I quit to become a mommy.

Thanks so much! I can study but its the homework thats going to kill me. My family (mostly my husband) does demand a lot of my time and with my hubby going into nursing school, It's going to be up to me to take care of the kids by myself since he will have a lot of homework.
