Tomorrow is my sisters birthday and I'm surprising her with a turtle cheesecake! I've searched online but can only find chocolate title cheesecakes! What I'm going to do is make a plain cheesecake and put all the goodies on top! My thing is I can't find a recipe for a plain cheesecake! Can anyone help me out??

Turtle Cheesecake

2 cups vanilla wafer crumbs
6 tbsp melted margarine
1 (14 oz.) bag of caramels
1 (5 oz.) can evaporated milk
1 cup chopped pecans, toasted
2 (8 oz.) pkg. cream cheese, softened
1/2 cup sugar
1 tsp. vanilla
2 eggs
1/2 cup semi-sweet chocolate chips

1. Combine crumbs and margarine, press into the bottom and sides of a 9 inch pan.
   Bake @ 350 for 10 mins.

2. In heavy saucepan, melt caramels with evaporated milk over low heat, stirring frequently,
   until smooth. Pour over crust.

3. Top with pecans.

4. COmbine cream cheese, sugar, and vanilla. Mix at med. speed until well blended.

5. Add eggs, one at a time,  mixing well after each addition, pour over pecans.

6. Bake at 350 for 40 mins, chill.

I save some of the caramel back and drizzle it over it after it's cooled, melt the chocolate
chips, drizzle that over it too, and sprinkle some pecans over it too!

*Since you're using a pre-made crust, just skip step 1.

Should work, might not need as much evaporated milk. Just add a little at a time until it's the right consistency.
