My son and I invented this recipe, it is so good! :)
1 large box pasta (any kind)
1 bag mini pepperoni (turkey or regular, I like the turkey)
1 green pepper
1 can black olives (sliced or halved)
1 block of mozzarella cheese, cubed
Grape tomatoes, halved (as much as you like, we used about half a container)
1 jar sliced mushrooms
1/4 or 1/2 a bottle Italian dressing or tuscan Italian dressing
Cook the pasta and run under cold water to cool, mix everything together and let sit until the flavors marry.
This stuff is so, so good I promise. You could add other veggies to it if you wanted too. My kids loved it and we make a batch almost every week. We use it for snack and side dishes. My mom also made an all veggie version minus the pepperoni, more tomatoes, cucumbers and balsamic vinegar for dressing that was very good (she is on this really funky diet)

We make it without the green pepper or olives. Very good.
