Menu Planning....HELP!!!

I'm doing my 2 week menu so I can go grocery shopping tomorrow and I need some ideas.

HELP!

What are some of your favorite recipes?

 Breaded meatballs in mushroom spaghetti sauce with garlic noodles on the side. That is what we are having tonight. I will try to think of some more! :)

oddest thing ever, but delish!!!!!  use regular YELLOW MUSTARD as a chicken marinade.  i prefer to cook it on the bbq, but oven works just fine, too.  book until outsides are a little crispy and enjoy.  realllllly slather that mustard on.  i promise you it wont taste like mustard once cooked, it leaves behind a semi-sweet taste.  mmmmm =)

 Swiss Dip Subs-  Sub rolls, deli roast beef, shredded mozzerella.  Cook the roast beef in a skillet till completely done because if you don't the juice makes the buns soggy.  You can saute onions and mushrooms in some beef broth as well if you like.  Then just put the roast beef on the bun and sprinkle a good amount of mozzerella on top of the meat, close up the bun and wrap in foil.  Cook at 350 for 20-30 minutes.  These refridgerate well.  You can also dip the sandwiches in beef broth if you like.

 

Kaiser Sub- Kaiser sub rolls (or whatever kind you prefer) Deli Turkey(we prefer both meats in honey roasted) and ham thin sliced, shredded mozzerella, shredded ice burg lettuce, olive oil and vinegar salad dressing, thin sliced tomatoes, pepperocini peppers.

Same as the above sub, just put 2 slices of turkey, and two slices of ham on each sub, sprinkle with mozzerella, wrap in foil and bake at 350 for 20-30 minutes.  Allow to cool for about five minutes after coming out of the oven and then top with shredded lettuce, tomatoes, diced pepperocini and dressing.  -This recipe came from our favorite sub shop that burnt down and they never reopened so we had to start making them ourselves.

My husband calls these his Strombolli subs, I have no idea what to call them  Sub buns, hamburger, 1 can of spaghetti sauce and once again mozzerella cheese.   Brown the hamburger, then top with spaghetti sauce, just enough to coat the meat with out it being too "saucey"  put the mixture on the sub buns and top with mozzerella and bake at 350, for 20-30 minutes. 

 

If you can't tell we have a lot of subs, especially in the summer.  We have a family of six, soon to be 7, plus my husbands parents eat with us frequently and these are easy to make a mass amount of, and reheat really well in the microwave for kids that aren't home for dinner, or for dh to pack for lunch. 

 

Lasagna is also a staple in our house, and fruit.  I just get a bunch of apples and oranges and strawberries, grapes, a cantalope and a water melon.  Cut everything up and mix it up in a bowl so it is all ready to eat and the kids pull it out and pick at is as they want to.

sour cream and chicken enchalads

What You Need

2 cups chopped cooked chicken
1-1/4 cups BREAKSTONE'S or KNUDSEN Sour Cream, divided
1-1/2 cupsKRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses, divided
1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
2 Tbsp. chopped cilantro
1 tsp. ground cumin
10 flour tortillas (6 inch)
1 cup shredded lettuce
1 tomato, chopped

Make It

HEAT oven to 350°F.

COMBINE chicken, 1 cup each sour cream and cheese, 1/4 cup salsa, cilantro and cumin.

SPOON about 1/4 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish; top with remaining salsa. Cover.

BAKE 30 min. Sprinkle with remaining cheese; bake 5 min. or until melted. Top with lettuce, tomatoes and remaining sour cream.
