My favorite easy (and mostly cheap) dinner recipes...

 Here are some of my familys favorite...

They are easy, most are inexpensive, and my kids like them ...

Easy chicken and noodles

Ingredients:
1 (26 ounce) can condensed cream of
chicken soup
1 (10.75 ounce) can condensed cream
of mushroom soup
3 (14.5 ounce) cans chicken broth
2 cups diced, cooked chicken breast
meat
2 teaspoons onion powder
1 teaspoon seasoning salt
1/2 teaspoon garlic powder
2 (9 ounce) packages frozen egg
noodles
Directions: 
1. In a large pot, mix the cream of chicken soup, cream of mushroom soup, chicken broth, and chicken meat. Season with onion powder, seasoning salt, and garlic powder. Bring to a boil, and stir in the noodles. Reduce heat to low, and simmer for 20 to 30 minutes.

 

Butter chicken

Ingredients: 
2 eggs, beaten
1 cup crushed buttery round cracker
crumbs
1/2 teaspoon garlic salt
ground black pepper to taste
4 skinless, boneless chicken breast
halves
1/2 cup butter, cut into pieces
 
 
Directions: 
1. Preheat oven to 375 degrees F (190 degrees C).
2. Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.
3. Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
4. Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear

 

Artichoke chicken

Ingredients

  • 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • Dash garlic powder
  • 4 boneless skinless chicken breast halves (4 ounces each)

Directions

  • In a bowl, combine the artichokes, cheese, mayonnaise and garlic powder. Place chicken in a greased 11-in. x 7-in. baking dish. Spread with artichoke mixture.
  • Bake, uncovered, at 375° for 30-35 minutes or until chicken juices run clear.

 Baked bean chili....

This is a huge recipe, cut in half or make for large groups

Ingredients

  • 2 pounds ground beef
  • 3 cans (28 ounces each) baked beans
  • 1 can (46 ounces) tomato juice
  • 1 can (11-1/2 ounces) V8 juice
  • 1 envelope chili seasoning

Directions

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Yield: 24 servings.

They sound great ... would have to substitute the chicken cos my other half is allergic to poultry.

 Chicken and Biscuits...

The biscuits are the best part of this, and would be great with other meals and casseroles

Ingredients

  • 3 cups cubed cooked chicken
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 cup milk
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon paprika

  • TOPPING:
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon dried minced onion
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon paprika
  • 1 tube (12 ounces) refrigerated buttermilk biscuits

Directions

  • In a large saucepan, combine the first six ingredients. Cook and stir over medium heat for 5-7 minutes or until heated through; keep warm.
  • In a large resealable plastic bag, combine the cheese, onion, parsley and paprika. Separate biscuits and cut into quarters; add to bag and shake to coat. Place on an ungreased baking sheet. Bake at 400° for 5 minutes.
  • Transfer chicken mixture to a greased 8-in. square baking dish; top with biscuits. Bake, uncovered, for 10-13 minutes or until bubbly and biscuits are golden brown.

 Cheeseburger quiche

I call it pie in my house to ease the male egos...I also add 1/2lb of cooked bacon to mine.

Ingredients

  • 1/2 pound ground beef
  • 1/3 cup chopped onion
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1/8 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 eggs
  • 1-1/2 cups (6 ounces) shredded cheddar cheese, divided
  • 1 unbaked pie shell (9 inches)

Directions

  • In a skillet, brown ground beef and onion; drain and set aside. In a bowl, combine mayonnaise, milk, oregano, salt and pepper; beat in eggs. Stir in beef mixture and 1 cup cheese. Pour into pie shell.
  • Bake at 350° for 35-40 minutes or until set. Remove from oven and sprinkle with remaining cheese. Allow to stand 5 minutes before cutting.

 Grilled 3 cheese potatoes

These can also be done in the oven, put them in a pie tin and cover tightly with tinfoil. Cook at 350 for an hour

Ingredients

  • 6 large potatoes, sliced 1/4 inch thick
  • 2 medium onions, chopped
  • 1/3 cup grated Parmesan cheese
  • 1 cup (4 ounces) shredded sharp cheddar cheese, divided
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
  • 1 pound sliced bacon, cooked and crumbled
  • 1/4 cup butter, cubed
  • 1 tablespoon minced chives
  • 1 to 2 teaspoons seasoned salt
  • 1/2 teaspoon pepper

Directions

  • Divide the potatoes and onions equally between two pieces of heavy-duty foil (about 18-in. square) that have been coated with cooking spray.
  • Combine Parmesan cheese and 3/4 cup each cheddar and mozzarella; sprinkle over potatoes and onions. Top with bacon, butter, chives, seasoned salt and pepper. Bring opposite ends of foil together over filling and fold down several times. Fold unsealed ends toward filling and crimp tightly.
  • Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender. Remove from the grill. Open foil carefully and sprinkle with remaining cheeses
