Beans, beans, beans the magical fruit...

I was just watching the food network and Alton Brown was making red beans and rice and it occurred to me that I have absolutely no recipes that contain beans. Are beans a staple in your house? Do you have any recipes?

Black bean, chicken, spinach enchiladas
Chili
Pinto beans and ham hock (so yummy with pico de gallo and a tortilla mmm...)

Yes we eat alot of beans. But we eat a high protien/high fiber diet too.  I make all kinds of dishes with beans...and alot of times throw in a can of black beans into something..just because.

I have an awesome red beans and rice recipe I make in the slow cooker...dont know the exact measurements right off but it's something like...

1 cup chicken broth

1 can diced tomatoes..undrained

4 cans of red beans...drained and rinsed

2 large onion..chopped

1 green pepper...chopped

3 stalks of celery...chopped

1 pkg. smoked sausage..sliced

garlic, red pepper flakes, a bay leaf....

It's yummo! And serve it over hot cooked rice.

Beans and nuts are such a huge part of my diet.  Of course it's necessary since I am a vegetarian and I need to suppliment my diet with foods that can replace the nurtients I don't get from meat. :)

We are a Mexican household, so yea we eat beans and rice almost everuday lol
