Strange Want.....

For some reason I want to try bubble and squeak. Ive never had it before but looks good. Anyone have a good recipe for it?

I know one thing is mashed potatoes but cant remember the protein of the meal..... Let me look it up.

Ingredients:

Servings:

 4

 

Units: US | Metric

  • 1 lb cold cooked potato
  • 2 ounces meat drippings or 2 ounces lard
  • 1  onion, finely chopped
  • 1/2 lb Brussels sprout, cooked and chopped
  • salt & freshly ground black pepper

Directions:

  1. 1
    Finely chop the potatoes and crush slightly.
  2. 2
    In a frying pan, melt half the fat and lightly fry the onion.
  3. 3
    Mix in the potato and sprouts and season well.
  4. 4
    Add more dripping or lard.
  5. 5
    Press the potato/sprouts mixture into the hot fat and fry over a moderate heat until browned underneath.
  6. 6
    Turn the veggie mixture over, add the last of the fat and fry until the other side is browned.

Its an English dish. All I know is that it has salt pork (or bacon), cabbage, onions, sometimes sausage, and potatoes

I have tried it... Meh it's ok... I prefer colcannon over bubble and squeak... But I am Irish and I love me some nutmeg lol.
