I am looking for a good and cute Valentine's day cupcake to make. I know there a quite a few mom's on here that make cute and yummy cupcakes. :) any help is great!

A lot of the cupcakes I make have alcohol in them... are you looking for kids or adults?

Type "Ultimate Vanilla Cupcake." It should pull up a blog entitled Cupcake Project.  I'm Google Chrome and it won't let me copyand paste. The vanilla bean cupcakes are AWESOME. I would add some strawberry whipped cream icing or strawberry cream cheese icing. OMG I am salivating!

Strawberry Cupcakes

  • 6 tbsp strawberry puree (you can used frozen)
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 4 tbsp milk
  • 1 tsp vanilla extract
  • 1 stick butter, softened
  • 1 cup sugar
  • 2 eggs
  1. To make puree - unfreeze if frozen. Puree in food processor, simmer for a few minutes, then push through sieve.
  2. Preheat oven to 350
  3. Sift flour, baking powder & salt into bowl. Set aside.
  4. In small bowl whisk together milk, vanilla, and puree. Set aside.
  5. Cream butter and add sugar. Beat until light and fluffy. Add eggs and mix on low until combined. Add half of the flour mix and mix briefly on low. Scrape down the bowl and add milk mixture, mixing until just combined. Scrape down bowl and add remaining flour mix. Mix on low, then divide batter evenly between the cupcake liners.
  6. Bake 20-25 mins.
  7. Cool in pans for about 5 mins, then cool completely on rack.

Strawberry Frosting:

  • 1/2 cup softened butter
  • 1 cup strawberry puree
  • 3 1/2 cups powdered sugar
  • 1/2 tsp vanilla
  1. Beat butter, sugar and vanilla. Add puree a little at a time until frosting is smooth and spreadable (you will probably not use the full amount)

This also works with raspberries and blueberries =)
