Sunday dinner s/o...roasted chicken

Looks like many are having roasted chicken for dinner...how do you roast your chicken? Seasonings..etc.

Hubby's making it tonight, so I have no idea what he's doing. I usually chop up Rosemary and garlic & smash it in with some butter and olive oil.. salt and pepper & rub it.all over the outside of the chicken and under then skin. Slice a lemon in quarters & shove that in the cavity with a few Rosemary & garlic cloves.. cover with foil and bake for maybe 45 minutes... the uncover and bake for another half hour or so until the outside gets golden Brown and cripsy.. yummy!

Lemon pepper, garlic, salt, and pepper.

I mix that with butter and put some under the skin too.

Olive oil, salt, pepper, oregano, parsley, onion and garlic powder

Then a can of beer up its tush...

(I have a can I keep and add good beer too. Canned beer is gross LOL.)

 I do different stuff depending on my mood.

Sometimes, I'll stuff an orange or a lemon(cut in half) into the cavity with some onions.  Then sprinkle s & p all over.

Other times, I put a bulb of garlic in the cavity with some onion.  I cut the head off the whole bulb, then just pull it out when it's done. 

I might just stick some onion & celery in it and sprinkle with poultry seasoning or thyme, basil pepper. 

Sometimes I do it "mexican" and use cumin, garlic and onion powders.
