My mom always cooked them in the crock pot with kitchen bouquet and magi seasoning.

 Ew, canned carrots.
I like them roasted best.  I like to clean whole carrots cut them into sticks a few inches long & thick.  Drizzle w/evoo, s & p a little sage.  Roast at 325 until tender.

I like them cut into coins too, then roasted.

I empty a bag of baby carrots in a microwave glass dish (I have a lid for it) add an inch of water and a pinch of salt, cover, and nuke for ten minutes or so until tender-crisp

Its my body and I'll do what I want to.

Do you think I could do that in a pan?

Yeah you would want to put them in a pan before you put them in the oven.  Is that what you mean?

Or yeah, you could cut them thin and sautee them with the same prep, too.

Pan only. Oven is being a bitch right now. Don't want burnt carrots lol.

 Gotcha.

Just heat some evoo in a skillet, you'll want to the carrots a little thinner cut for tenderness, with this way, though.

Or after you sautee for a few minutes, you could add a bit of water, cover it and steam them the rest of the way.

I roast them in the oven in a tinfoil packet with onion, garlic, salt, pepper, and olive oil.
