This Crockpot Italian Chicken is VERY good.
This Crockpot Barbecue Chicken is also VERY good (lol).
You can also cube boneless skinless chicken breasts, dump it in a crockpot and pour over spaghetti sauce (either homemade or jarred) and let it go all day. This has been my most recent favorite.

1-2 lbs bonesess skinless chicken breasts
1 packet taco seasoning
Medium to large container of salsa
Put the chicken in the crock pot. Mix together the taco seasoning and salsa, pour over the chicken. Cook on low for 6 hours. Shred it when its done and you can make tacos, burritos, chicken nachos....you can do so much with this :)
my favorite is chicken and dumplings. I usually use 1 1/2 chicken breasts (family of 3 and there's usually leftovers) I put the chicken in a big pot and fill it up with enough water to completely cover the chicken. I add a good bit of pepper and let it boil until the chicken is done (20 minutes or so) then I take the chicken out and shred it with 2 forks. I put the chicken back in the water and add a can of cream of chicken soup and turn the stove on low. To make the dumplings, I follow the instructions on the side of a Bisquick box (although I usually only make half of what it calls for) when the dumplings are all rolled, I turn the heat on the stove back up and add the dumplings. Then I add half a cup of milk and a tablespoon of butter then gently poke all the dumplings under the water. I let that cook for 10-15 minutes, stirring carefully only the last couple minutes otherwise the dumplings will break apart
