I just cook them in a pot with a little water and tiny bit of oil.
I steam them, and then add some lemon pepper seasoning. I try not to put butter/oil on my veggies.
I sautee garlic, onions and olive oil in a pan. Add tomato sauce and then green beans. Delicious.
Sometimes, I simmer them until soft, then puree with butter, cream, salt and pepper. :-)
I love green beans. It's my favorite vegetable. I prepare them a few different ways. I roast them on the grill, or saute them on the stove with olive oil, garlic powder and onion salt or bake them tossed in olive oil, which French's fried onions and seasoning salt. YUM!
If you skip the fats on veggies, you lose quite a few of the nutrients in them. Some of the vitamins in veggies are fat soluable. If you don't have fat on them or nearby, those vitamins are not released and your body doesn't get the use of them.
