My two year old daughter loves pad thai, and asian style broccoli stir fry with mein noodles. All my kids like curry (esp moroccan cury because of the sweet potatoes), black bean burgers, shawarmas, kabsah, cilantro lime rice burrito bowls w/home made vinaigrette, falafels (baked), I like to do my spaghetti with veggie noodles,  homemade red wine tomato sauce, and lots of veggies. I've been stuck in a hotel waiting on our new house to be done so my brain is also going a little blank on meals at the moment. lol

Could you share the recipe? It looks so good! :)

The kids LOVED it! (And I did, too! LOL!) And in the muffin tins, the meat cooks so quickly! Maybe 15 minutes and it was cooked through...as opposed to the usual hour or more for meatloaf :)

This is so cute!!! Must try this soon!

No real recipe, actually. Just make meatloaf as you like it, but divide and cook in muffin tins (I would recommend using paper just so the meat doesn't stick...not that I learned the hard way or anything...). Then make mashed potatoes as you like them. Use a frosting bag or ziploc baggie with the tip cut off and swirl the mashed potatoes on the meatloaf :)

I'm having apple sauce, plain white toast, herbal tea and, if I can choke it down, possibly a banana.

Ugh.
