Homemade baked beans. Our stock pile of White Northern beans was getting out of hand so I made a 2 large pots of baked beans.

I also made homemade cornmeal muffins.

In my bake beans I use ham hocks and bacon.

Should I run to the store and buy a meat or some thing else? I have carrot sticks that I could add as a side if need be. We eat all veggies raw other then beans. DH likes eating just beans and corn bread.

My recipe

1lb Beans this time I used White Northern beans

1/2tsp Brown sugar

1 tbls Molasses

1 tbls Dry Mustard

1 lb of thick lean bacon

Soak beans over night. Next morning boil the beans and ham hock til tender. Pull the bone out. Do not drain the beans. Cut bacon 1/4in pieces. Mix in the brown sugar, molasses, bacon pieces,  and dry mustard.

Pour everything into dutch oven bake at 200 for 4 hours.

Today I made a quad batch

My corn bread

1 1/4 c wheat flour

3/4 c corn meal

1/2 tablespoon honey

2 tsp. baking powder

1/2 tsp. sea salt

1 c skim milk

1/4 oil

1 egg

Heat oven to 350 f grease bottom only of 8 inch square pan

Stir wheat flour, corn meal, sugar, baking powder, and salt with spoon about 50 times.

Beat egg, milk and oil into smaller bowl till well mixed

Stir egg mixture into flour mixture

Bake 26 to 28 minutes or until toothpick inserted in center comes out clean.

All my recipes have been some one else's but I have modded to suite my family

I don't see the problem I don't think every single meal has to be perfect. Cornbread and beans is perfectly fine if it's not an everyday thing.

Too much protein can damage your kidneys.

And it's not too healthy but healthier than I've seen.
