My husband and daughters leave tomorrow for a week-long trip to Disney with all of my in-laws. I recently started a quick course at school and I also have a kids yoga teaching workshop starting Friday so I have to stay home all by my lonesome.
My husband and I haven't spent a night apart since before we married and my girls have never gone away more than two nights. I'm really not sure what I'm going to do with myself!
The main point that I'm posting, though, is that I have no idea what to cook while they are gone! What are some good, easy meals to make for one? I don't want to go to too much trouble since it's just me, but I still want to eat tasty stuff.
I'm planning sushi for one night and thought maybe I'd cook a roast in the slow-cooker and do different things with that.
