Dh came home from work with 4 different kinds of cheese. He got provolone, Munster Colby jack and some sort of horseradish cheese. It's a lot, I mean a lot of cheese! The grand total was almost 40 lbs! He is in a stocking up phase :). This cheese is going to last at least a year!

There can never be too much cheese! There's no such thing as too much cheese :)

We eat a lot of cheese in our house how do you even keep tht much cheese fresh though!

Mold is a part do the ageing process. You just slice the mold off and the cheese is good

He bought the huge rolls of cheese they have in the deli. He got it from a local Amish store that sells excellent cheese that isn't too expensive. I cut it up into one pound portions and froze it.

My mom used to go to the local dairy when we lived in a small town in Iowa and buy I think 5lbs of mozzarella and 5lbs of cheddar and then grate it all up and put it in ziplocks and put it in the freezer.  She got a really good deal doing it this way.  My mom was a very frugal person!

Yes, buy it in bulk, prepare the way you want, and freeze.  When you store it in the fridge, wrap paper towel around the cheese and replace when the towel gets damp. This is supposed to make the cheese last and not get moldy.
