Found this on Pinterest:

6-8 corn tortillas (I use flour)
1 pre-cooked plain rotisserie chicken shredded (I cook my own chicken breasts)
1 cup sweet corn
4 cups shredded Mexican blend cheese, divided in half
3 Tbsp butter
3 Tbsp flour
1 1/4 cups chicken broth
1 can cream of chicken
1 cup sour cream
1 4oz can of chopped green chiles
1/4 tsp pepper
1/4 tsp sea salt

1. Preheat oven to 350
2. Fill center of each tortilla with shredded chicken, tbsp of corn and pinch of cheese (that's all preference). Roll and place seam side down in baking dish*.
3. In a pot, heat butter until melted. Whisk in flour until it creates a paste. Add in chicken broth, cream of chicken, sour cream, chiles, salt and pepper. Whisk gently until warm and smooth (approx 5 mins).
4. Pour over enchiladas and top with remaining cheese. Bake for 25-30 mins and serve warm.

*I tend to make the sauce first and spread a little on the bottom of the pan and then put in enchiladas. Just to minimize any sticking :)

Im going out with a friend, but what else do you have you can use? Noodles, rice, tater tots, mashed potatoes? I could easily suggest something if you list some other ingredients for me.

Use it as a gravy in a casserole.

Browned Ground beef, veggies, cooked rice, and alfredo sauce. Bake.
