I have been cooking a roast with potatoes and carrots in the crockpot all day. You could do chicken and rice or chicken and dumplings or baked chicken with other things to go with it just depends on what all you have :)

You could make brown sugar chicken. It's delicious. Steamed veggies with butter and rolls on the side. Or with the beef I like to make sloppy joes, but I dress them up. I put them on toasted potato buns with baby swiss and avocado, and we do salad and fruit on the side. I get a lot of people telling me they hate sloppy joes, except when I make them. I caramelize onions and add them to the beef mixture, and make the sauce from scratch. They are soooo good.

i am super tired today, so i am doing something very easy; hamburgers in a cassarole dish, with some water and mushroom soup, herbs & pepper and baked in the oven.

served on top of mashed po, with a can of creamed corn.

not very healthy, but simple.
