The man that hates tomatoes!

My DH hates tomatoes, I can sneak them in if I purée them. I love tomatoes.

However the one tomato thing I really dislike is tomato soup! Yuck! He loves it! SMH so strange.

So does anybody have a good homemade tomato soup recipe? Cardboard is better than the crap in a can! Lol help a girl out please :)

HOMEMADE TOMATO SOUP 
3 lbs freshly picked tomatoes or vine-riped
8 oz. chicken broth or water
1/2 c. chopped celery
2 tbsp. fresh basil
1/2 c. chopped onion

Combine tomatoes and broth; stew for 30 minutes on low heat. Strain into a bowl, removing seeds and skins. Return to pot.

Stir in 1 1/2-2 tbsp. flour. Add celery, basil and onion.

Cook over very low heat until mixture has thickened to desired consistency. Stir in 1 cup milk or half and half during the last 10 minutes.

Season to taste with salt and pepper. If a smooth soup is desired, process in blender before serving.

Pair this with grown-up grilled cheese sandwhiches.
All you need is:
One Loaf Texas Toast
Bacon (cooked first)
Favorite Cheese
Slice of tomato
Put it all together and cook it just like an ordinary grilled cheese. Tastes AMAZE with homemade tomato soup.

 I actually like just heating up my canned tomatoes and eating like soup! Yummy!

How much does this make? I have 2 adults, 3 teenage boys, 6 yr old boy and a toddler ;)

Progresso makes a really good tomato soup. The high fiber one. It is the only can soup I will eat

Hmmm I couldnt find servings for that recipe and have not made it in a long time.   I found a different recipe which i like more.


Homemade Tomato Soup with Grilled Cheese Croutons

Yield: Soup makes 6-8 servings


INGREDIENTS

  • 4 Tbs. butter
  • 1/2 small onion, minced
  • 6 Tbs. flour
  • 96 oz can tomato juice
  • 4 cups milk, warmed
  • 4 tsp. sugar
  • salt and pepper to taste
  • 1/8 tsp. garlic powder

  • FOR THE GRILLED CHEESE CROUTONS
  • 2 slices Italian bread per person
  • 2 slices cheese per person (Cheddar, American, Provolone etc)
  • butter

INSTRUCTIONS

  1. Melt butter in 5 qt. soup pot.
  2. Add onion and cook over medium heat till soft.
  3. Whisk in flour and cook 1 minute.
  4. Gradually add tomato juice, whisking to blend.
  5. Stir in milk.
  6. Season with sugar, salt, pepper and garlic powder.
  7. Heat to warm, but do not let boil.
  8. FOR THE GRILLED CHEESE CROUTONS
  9. Make 1 grilled cheese sandwich per person, using 2 slices of cheese. Two different types is really good.
  10. Cut finished sandwiches into cubes.
  11. Separate pieces and place on cookie sheet.
  12. Bake at 275 degrees for about 10 minutes.
  13. Serve with soup.

Notes

Grilled cheese croutons are best when fresh. We let each person decide whether to eat the croutons in the soup or along with it.
