What for Lunch or Dinner today?

Hey Ladies,


Have you planned this far yet..


I just found this recipe, maybe you may want to put on your menu, if not what are we planning on eating today.. Are you going out to eat, if so where? What can I eat with this though, maybe some baked chicken.. I know its too early to be thinking food, lol..Haven't even given you the chance to have breakfast, im sorrylol..

Parmesan Garlic Roasted Potatoes

  • 4 pounds Potatoes
  • 2 tablespoons of olive oil
  • 3 cloves garlic, minced
  • 2 Tablespoons fresh chopped parsley
  • Fresh grated Parmesan cheese
  • Salt and pepper

Preparation:

  1. Boil a pot of water
  2. Dice the potatoes to an approximately 1 inch cubes.
  3. Once the water has boiled, throw the potatoes in and cook for about 5 minutes.
  4. Pour the water out and shake the potatoes hard, so their edges would become un-even.
  5. In a pan, put some oil and heat it up.
  6. Once the oil is hot, add the potatoes and roast evenly.
  7. While roasting, check if the potatoes are ready. once they are almost ready, add the garlic and the cheese and season with salt and pepper to taste.
  8. For serving, sprinkle with parsley.

OMG those look SOOOO yummy.

I have not planned that far yet. We havent even had breakfast yet.

We're going out to eat for lunch...hubs wants some authentic Mexican food...so since we're going to be doing that, I'll probably make a very light dinner later on.

Turkey wraps with bell peppers and fruit. Dinner is going to be lemon pepper grilled tilapia with salad and asparagus.

Taco bake.  I am changing it up a bit from the original recipe. To use up leftovers of things in the fridge.  Below is the original recipe.



Taco Bake
Ingredients:
1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend
Directions:
Brown and crumble ground beef. Drain excess grease.
Add in taco seasoning and water (following directions on back of seasoning packet).
Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.
Give it a good stir until thoroughly combined.
Preheat oven to 350F degrees.
Spray an 8-inch round baking pan with nonstick cooking spray.
Layer the bottom of the pan with a flour tortilla.
Now add about 1/3 of the ground beef taco filling on the the first layer.
Then add 1/3 of the shredded cheese.
Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese.
Bake at 350F degrees for about 15-20 minutes.
Until cheese is melted and edges are slightly golden brown.
Allow to cool for a couple of minutes.
Then slice and serve.
Sour cream and diced tomatoes on top are optional.

I am making biscuit veggie pizza balls for lunch.

For dinner we are having copycat Red Robin Island Sunburn Style Chicken Burgers

I just paid $41.50 for swordfish and a lovely piece of King Salmon.  Thats for my husband abd I . 

Kids won't eat fish so they get hamburgers tonight.

those look so yummy!!!  when cooking after boiling.. is it  in the oven or on the stove? if in the oven at what temp?  do u flip them? how long?

 anyway... we havent planned too much but  ds1 ate  ravoli  for lunch I had vegan chiken cutlets & for  dinner dh is bbq'ing hamburgers & idk what me or ds1 or ds2   will have.. were not at all prepared lol

Lunch was a 1/2 tuna sandwich
Dinner will be 2 tacos :)
