 Today hubby requested Escabeche de Pollo for supper....Several of you guys have tried my recipes and enjoyed the results before so,here goes: 

  • 1 chicken
  • ½ teaspoon whole pepper
  • ½ bottle of white vinegar,and red apple cider vinegar to taste
  • 13 pearl onions
  • ½ teaspoon fresh pepper
  • fresh green beans,cut the ends off
  • small bag of baby carrots
  • red curry paste,1 teaspoon
  • chicken broth,to taste
  • And salt to the taste of the palate
  • 1 whole cauliflower,pulled (cut) in medium chunks
  • at least 10 small golden yellow potatoes

 

  • We begin by cutting the pieces of chicken in several parts, wash it and brown it. Also,this meal is better if not cooked in aluminum pot.
  • Then we will proceed to peel the onions and place them together in the pot with the chicken.
  • We  cut the vegetables in several pieces,also placing in the pot with the chicken.This is also when you start adding the broth,vinegars and curry paste.
  • add the seasoning (salt,pepper,cumin-if you like)
  • Make sure the chicken and veggies are well cooked,let cool.
  • Some people eat this hot and others prefer it cool.Either way,enjoy!

  This broth is tangy,but NOT too acidic.Most of my friends that have

 tasted it,enjoyed it

Thank you for the recipe! It's one I think I would like to make when I have some more time. :)  The tangy broth is an intriguing aspect.

 I do not know,I have never tried to make it like that.It could I guess...just as long as you don't let the veggies get mushy.
