Healthy eating and meal planning

I'm trying to eat healthier. I'm also deciding that I HATE last minute throwing meals together. Hate. It. I used to meal
Plan (just dinners), and it was so much easier, I ate healthier, and I spent so much less money. So, I'm moving back to that again. However, since I do have some picky eaters, I'm not going 100% healthy/plant based/carb free. I'll get it started, and slowly cut things out. However, thanks to TM posting her African Peanut Stew on fb, that got me motivated to find delicious plant based meals and introduce them to the family.

Here's this weeks menu. It's not perfect, but I'm also trying to please 10 people, so we can't have everything. Lol

We do low carb and gluten free here (most of the time)...I have 2 picky eaters so will try to do a meat and veggies for our sides...things like broccoli, green beans, etc...as far as the meats go I usually just season them with something like lemon pepper, seasoning we call Pollo Tropical because it taste like what you get at the restaurant...we have pork chops, chicken, fish, roast and burgers.

This sounds delicious. But it is a lot of cooking. Of course if you are cooking for a good sized number of people it would be. Do you have leftovers?

We did tonight. I'll probably do spaghetti casserole or something for lunch. I decided to switch tomorrows dinner for today because I was tired.
