I know it is super early put I need some ideas before I head to the store!

I'm making Braised Herb Chicken Thighs with Potatoes. The recipe is from Cooking Light. It's the first time I'm making it so we'll see how it goes. I'm substituting sweet potatoes for the carrots as I don't like carrots.

It looks like Dirty Rice, Salad and Mexican Cornbread unless Bryce changes his mind....it's his birthday so it's his choice.

Hmmm.....I am making Turkey Tetrazzini with leftover turkey from the holidays.  Looking for something quick and easy?  Try this:

Italian Chicken:

chicken breasts or chicken tenders (breasts are easier.....1 per person but tenders work just as well)

jar of spaghetti sauce

pasta of choice

Put enough sauce in baking dish to cover bottom.  Add chicken, season to taste.  Pour rest of sauce over chicken.  Cover with aluminum foil and bake at 350 for 45 minutes.  Remove foil, sprinkle with parmeasan cheese, bake for 5 more minutes.  Serve over noodles.

 

This is an easy and flexible recipe.  I have done this recipe as chicken with salsa over mexican rice or yellow rice and chicken with brown gravy over mashed potatoes.  Seasonings and toppings are dealers choice.

If you are somewhere cold....crockpot chili with cornbread.
