Just was wanting to know if any cafemom have a recipe that they would like to share with other cafemommies. Here is my recipe that I would like to share:

Corn Casserole

1 can of cream style corn

1 can of whole kernal corn - drained

1 stick of butter - melted

1 egg - beaten

1 package of Jiffy cornbread mix

1 (16oz.) sour cream

Preheat oven to 350 degrees. Mix all ingredients above and then put into a casserole dish ( round or square). Bake until golden brown ( approx. 1 hour ). When done take out and let cool for about 5 mins. then eat and enjoy!

This is sooo good and sooo easy.  I got it from a Southern Living cookbook years ago.  It's one of our favorites.  I always double it and use a full bag of Pepperidge Farm.  If you can't get fresh squash they have it in the frozen vegetables section.  I think I'm going to make it today!

     Squash Dressing

    2 cups sliced yellow squash

    1 medium onion, chopped

    1 cup water

2 cups cornbread crumbs or Pepperidge Farm

    ¼ cup margarine, melted

1 10 oz. can cream of chicken soup, undiluted

    ¼ tsp. pepper

    whatever other seasonings you enjoy

Combine squash, onion, and water in a saucepan; bring to a boil.  Cover, reduce heat, and simmer 10 minutes or until squash and onion are tender.  Drain well, mash.  Combine squash mixture with remaining ingredients, stirring well.  Spoon into a greased casserole or pan.  Bake at 325 for 25 minutes or until thoroughly heated.  4-6 servings.

All my pregnant ass can think about right now is fried green tomatoes.  My advice is to use mashed potato flakes in the batter with the flour and corn meal.  It gives them a heartier taste!  Oh, and ranch with barbeque sauce and a little honey mustard makes a great dipping sauce for them!

    Bacon wrapped Asparagus
    Preheat oven to 400
    1 batch of asparagus
    1 package of bacon
1/2 cup of garlic butter melted
wrap 3 stems of asparagus in bacon, put in baking dish seam side down, after all asparagus is wrapped. Baste with garlic butter, pour remaining butter on top. Bake until bacon is cooked. SO YUMMY and it can also be done on the grill!
Also....Pinto beans and Jimmy dean sausage. Chop up bell pepper and onion, garlic powder, salt, pepper, and cilantro. Best if made on the grill as well. Really yummy and only takes a few minutes to cook

I got this recipe after I took my entrance exam in culinary school. It's soooo yummy - I made it as an appetizer for dinner last night and it was gobbled up.

    Fried Mozzarella Ciliegine:

    1 container Ciliegine Mozzarella balls

    3 eggs beaten

    Seasoned bread crumbs

    Oil for frying

In saucepan heat oil (2-3 inches; or able to cover/immerse mozz completely) for frying. Dip Mozzarella in egg then cover with bread crumbs, dip in egg again then once more in bread crumbs. Then fry them in the oil for about 15 seconds each side and scoop out with slotted spoon and place on paper towels to soak up excess oil. Serve immediately with spicy marinara sauce! YUMMY!
