Ladies- I need your help. My SO and I are not going out for Valentines until after we get our income tax next week. So I am making him a romantic dinner. I am making him Engagement Chicken (we have been together for 7 years and have 2 kids. His DL expired about 5 years ago, but he had a ton of tickets-most before we were together-they equaled to about $8,000. in TX you cant get married without a DL. Well, next week they will be paid off and he can get his DL reinstated....So hopefully the chix will work...LOL

Anyways, I want this dinner to be PERFECT. His fav, veggie is Acorn Squash, I personally do not like it, but this is for him. So I need a recipe. I googled it and I decided to ask ya'all how you make it.

Thanks!

Heather

Cut in half and take out seeds. Microwave each half for 5 minutes.  Put in the oven at 350 for about an hour.  Take out of oven scoop squash out and mix with butter and brown sugar to taste.

Go to tasteofhome.com and go to recipes and search there.  I love that site because you can see what the award winning recipes are, and which ones have good ratings.  And there are usually photos too.  It's where I go any time I need a new recipe and hasn't failed me yet, lol!  Good luck!

I cut mine into slices, season and batter with cornmeal and then fry it, how does he like it made? I've heard of squash casserole, but have never made any? Wish I could help more.

This is how I make it at Thanksgiving and everyone loves it!

Cranberry Acorn Squash

4 small acorn squash

1 tbsp salt

8 tbsp butter

8 tbsp honey

1 can whole cranberry sauce

Directions:

1. Wash and dry squash.

2. Place squash in Microwave Oven and heat, uncovered, 15 minutes or until they feel soft to the touch.

3. Let stand 5 minutes.

4. Cut in half and remove seeds.

5. Place cut-side-up in a shallow, heat resistant, non-metallic baking dish.

6. Sprinkle with salt. Place 1 tablespoon of butter and 1 tablespoon of honey in each half.

7. Heat, uncovered, in microwave oven for 4 minutes or until butter has melted.

8. With a brush or spoon, spread honey-butter mixture over cut surfaces of squash.

9. Place a spoonful of cranberry sauce in each squash half. If warmed cranberry sauce is desired, return filled squash halves to Microwave Oven for 6 minutes or until cranberry sauce is hot.
