I've decided to start writing out our dinner menus for the week before I go out shopping. BUT, It seems like week after week, it's the same meals. I have no variety. Will you please help me figure out some good/fairly easy/ fairly cheap dinners? Post your favorite recipe, or what have you! I'm a big fan of Rachel Ray, and DH is a basic Meat and Potatoes kind of guy. The only things we don't like are mushrooms and onions. Ready? GO!

Here is a great site to help if you want cheap.

It is 5 dollar dinners. And they do it by store.

http://www.5dollardinners.com/2007/07/bargain-meal-of-the-week.html

Kraft.com also has some great recipes. They also do a shopping list.

A few things we have tried from there are the Taco Bake and Sweet-N-Sour chicken and they were really good.

This is the recipe I use. Only I add more cheese and no mushrooms. I know you said you don't like onions so Im sure you can leave them out. It's so hearty and delicious. I didn't know what beef consemme was, but I found it in the soup section lol. We eat ours with salad and garlic bread!

Ingredients

Directions

  1. 1
Melt butter in large, heavy-bottomed stock pot or Dutch oven over medium heat.
  2. 2
Add green peppers, onion, and mushrooms and saute until tender (about 5 minutes).
  3. 3
Add flour and cook another 5 minutes stirring often. This is an important step to cook out the flour taste.
  4. 4
Slowly whisk in milk and bring to a simmer stirring often until soup thickens.
  5. 5
Reduce heat to medium low and stir in beef consomme, salt and pepper.
  6. 6
Slowly stir in provolone until all is melted and incorporated into soup.
  7. 7
Remove from heat and stir in roast beef.
  8. 8
Serve with a crusty loaf of french bread.
  9. 9
To freeze: Prepare soup as directed and allow to cool. Place in rigid freezer container. Seal, label and freeze.
  10. 10
To serve: Thaw in fridge. Reheat in microwave or on stovetop, stirring to recombine the soup.
