I need the easiest pancake recipe possible QUICK
Ladies help me out here, I have never been able to make pancakes from scratch, every recipe I try, the pancakes come out so heavy that you could sink a boat with them. My DD woke up this morning wanting pancakes and I can't get her off of this kick. Does anyone have a really easy recipe that doesn't come out heavy? I have one out of a cook book but I have no clue what I do to them that makes them so yucky. Anyone got any tips that might help me? Thanks in advance!
I just grabbed this from a group on here that I belong to called Recipe Swap. I've never tried this recipe, but maybe it will help you. It seems pretty quick and easy. I know when my mom makes pancakes, she leaves the batter SLIGHTLY lumpy. You don't want to overmix it.
FLUFFY PANCAKESINGREDIENTS
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk
- 1/4 cup shortening, melted
DIRECTIONS
- In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
- Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
I make mine out of the cookbook. two tricks I use. Use a hand mixer and beat on high for about 45 seconds, this infuses air into the mixture making it lighter. 1 tablespoon of lemon juice per cup of milk. Put the lemon juice in the milk, stir and let sit 10 minutes before adding to dry mixture. This make the pancakes melt in your mouth.
Make sure you are mixing all of your dry ingrediants in one bowl and then all of your wet in another bowl. Then add the wet to the dry and mix together quickly.
I refuse to raise SHEEPLE. Instead, I prefer to raise INDEPENDANT, STRONG WILLED, BRAVE people.
