Breakfast Omelette

1/2 cup butter or margarine
10 large eggs
1/2 cup flour
1 teaspoon baking powder
1 dash salt
2 cans chopped green chiles
2 cups cottage cheese
4 cups Monterey jack cheese -- shredded
Preheat oven to 400. Melt butter in baking dish in oven. Remove and tip dish
to coat bottom with melted butter.
In large bowl, beat eggs. Stir in flour, baking powder and salt. Add melted
butter. Set dish aside to be used later.
Into large bowl of beaten eggs, stir in chilies, cottage cheese and jack
cheese. Mix until blended. Turn batter into butter coated dish and bake for 15
minutes. Reduce heat to 350 and bake 30 to 35 minutes until browned and set.
Can be frozen. To serve, thaw and reheat in a 400 degree oven for 10 minutes.

Green Chili Souffle

1 - 16oz can of desseded green chilies
1 lb. sharp cheddar cheese - shredded
1/2 lb Monterey Jack cheese- shredded
4 eggs , beaten
1/2 tsp flour
1/2 tsp salt
1 large can evaporated milk (12oz size)
picante sauce

Place 1/2 of the chilies in a 9x13 inch pan. Top with a layer of jack
cheese and then cheddar cheese. Make a second layer of chilies, then add
the rest of the cheeses. Mix the remaining ingredients and pour over the
chili and cheese layers. Top this with picante sauce. Bake at 350 degrees
for about 40 minutes until the mixture is bubbly.

Freezer French Toast

5 eggs
1 1/4 cups milk
1 1/2 Tablespoons sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
16 slices French bread slices
Heat oven to 500°. Butter cookie sheets.
Beat eggs, milk, sugar, salt and vanilla until mixed.
Dip bread in egg mixture: arrange on baking sheets.
Bake until bottom is golden brown, about 5 minutes. Turn slices; bake until golden brown about 2 minutes. Cool on wire rack.
Grease baking sheets. Place in a single layer on baking sheets. Flash freeze until hard. Wrap and label; return to freezer.
To serve ( 15 min before serving ), remove freezer French toast from freezer and unwrap; place on ungreased baking sheet. Heat until hot, 8-10 minutes, or use toaster oven or frying pan to reheat.

12 slices French bread
8 eggs -- beaten
1 1/2 cups milk
1/4 cup sugar
1/2 teaspoon nutmeg
1 teaspoon cinnamon
Topping:
10 ounces frozen strawberries -- thawed
1/4 cup sugar
1 Tablespoon cornstarch
2 Tablespoons water
powdered sugar -- for sprinkling
Butter a 9X13" baking pan. Lay the bread in a single layer on the bottom of the pan.
In a medium bowl, mix the eggs, milk, sugar, nutmeg and cinnamon.
Pour the mixture over the bread.
Cover the pan and refrigerate it overnight.
When ready to bake, preheat the oven to 450°.
Place the baking pan on the oven's middle rack, bake 20-25 mintues.
Topping: Cook the strawberries and sugar in a saucepan over medium heat for about 2 minutes.
In a small bowl, combine the cornstarch and water and pour into the strawberries.
Cook until the mixture thickens.
Sprinkle with the powdered sugar.
Serve with maple syrup.

Awesome Breakfast Casserole

1 1/2 lb hash browns; frozen

1 lb bacon or sausage

3 eggs

2 oz Velveeta
2 oz cheddar; shredded

1 can cream of potato soup
pinch salt
pinch pepper

Cook the hash browns with the onion till crisp. Fry the meat. Mix in a 13X9-inch pan. Add the cheeses, soup, beaten eggs, salt and pepper. Bake at 350 for 30 to 50 minutes. Original says this serves 4--but I cut into 8 servings Freeze portions.

Breakfast Cake I usually try to keep these on hand, since they freeze so well. 1 egg, beaten 3 Tbs. soft butter 2/3 cup sugar 1 Tbs. vanilla 2 Tbs. baking powder 1 1/2 cups cake flour 1/2 Tbs. salt 1/3 cup milk 1 1/2 cup berries (I use strawberries or blueberries, both do well) Bake at 350 35-40 minutes. Slowly beat sugar into butter and egg mixture until light. Add vanilla. In a separate bowl sift together flour, salt & baking powder(you need to sift this for the cake to do right). Add the flour mixture to the egg mixture alternating with milk, until well blended. Add berries and stir by hand. I bake these and freeze them. Then when we want one,I thaw it and warm in oven. Then sprinkle with powdered sugar before serving. Great for those days when your in a hurry.

 make several batches so I use the whole container of the orange juice
concentrate. I love these with pancakes.

Breakfast Sausage Balls

2 Tbs concentrated orange juice
2 Tbs maple syrup
4 slices bread
1 egg, slightly beaten
1/2 pound mild bulk sausage
1/2 cup finely chopped roasted pecans
2 Tbs parsley flakes

Combine orange juice and maple syrup. Break up bread in orange juice and maple
syrup mixture. Add egg and mix thoroughly. Blend in remaining ingredients. Make
into small sausage balls about 1 inch in diameter or form into patties if
desired. Fry slowly in skillet or griddle over medium heat until browned.

Freeze after cooking. Reheat in a warm oven before serving. (I also like to
toss in microwave to reheat, depending on how many servings I am reheating)

Makes 4-6 patties or 12-16 sausage balls.

Great way to use up stale bread. The pecans can be omitted if desired but they
do add to the finished product.

Gingerbread Waffles
 
1/2 cup Molasses
 
6 TbspShortening

2 cups Flour

2 tsp Baking Powder

1/2 tsp Baking Soda

1 tsp Salt

1 tsp Ginger

1/4 cup Sugar

2 Eggs

1 cup Milk
 
Combine Molasses and shortening in saucepan, heat to boiling point; cool. Sift flour; measure; add baking powder, soda, salt, ginger and sugar; sift again. Beat eggs; add milk and cooled molasses mixture; pour into flour mixture and stir just enough to moisten the dry ingredients. Bake about 5 to 6 minutes in a waffle baker slightly cooler than for plain waffles. Serve with whipped cream or hard sauce; or with applesauce and bacon. Makes about 6 waffles. Flash freeze and then wrap for freezer. Heat up in toaster.

do you bake this in a loaf tin?  if not, how?

I made breakfast burrito's this morning and made extra to freeze.

1 lb turkey sausage

2 dozen eggs

cheese

12 tortilla's

Cook the eggs and sausage then mix together. Put in tortilla and top with cheese, roll like a burrito.

I then put them on a cookie sheet and froze them. After they were frozen I wrapped them in wax paper and put them back in the freezer.

To eat them, cook in Microwave for 1-2 minutes and serve. My daughter puts salsa on it as she eats them.

I baked it in a 13x 9 pan but I am sure you could bake it in a loaf pan also...

Inside me lives a skinny woman crying to get out. But I can usually shut her up with cookies.
