I'm DYING to make my "world famous oatmeal scotchies" (as my kids call them), which I haven't made since I went vegan. I haven't been able to find any vegan butterscotch chips locally, and the places I've seen them online are pretty expensive. I've made my own vegan chocolate chips (when I was really jonesing for cookies & couldn't get to Whole Foods, the only place I've found them), and they turned out quite tasty if I say so myself. I've found several recipes for butterscotch CANDY, where you cook the syrup to a "hard boil" state, but nothing for the softer chips like you use in cookies. Any ideas or recipes?

Price Chopper brand butterscotch chips are "accidentally vegan". I know because I have my own "famous oatmeal scotchies" recipe :D If you don't live near one, maybe a family member or friend does and they can send them to you? I'm sure you could make your own, but that'd be a lot easier!
