I am a new veg and I need some ideas for a good non-meat dinner? Thanks for all your help.
last night, I had roasted tomatoes with marinated tofu, sauteed spinach with onions, and whole grain toast. Delicious, and so colorful. All told, it took about 10 minutes to prep and about an hour to cook (most of that roasting time in the oven) I halved and seeded the tomatoes, drizzled a little olice oil and balsamic vinegar on them, and sprinkled on some oregano. Roasted for about 30 minutes, then topped them with tofu that had been diced and marinated in olive oil, lemon juice, garlic and oregano. Roasted another 20 minutes or so.
Tonight I am having walnut encrusted tofu with spinach and oranges. The recipe is from "Vegan on the Cheap." It is yummy. Tofu, slice, drain and press, flour, dip in a mixture of maple syrup, vegan mayo, dijon mustard, soy sauce, then in ground walnuts mixed with panko. Pan fry then set aside. Sautee spinach and two sectioned navel oranges and sage. Yummy...

Tuesday - lentil tacos
