Ok, so I found this recipe, it seems like something I have had before, but I didn't know that was what it was called :)
Does this look right? Anything to add, especially to make it in a more Palestinian way since I know sometimes the recipes vary be country?
Would a guest really be offended if I made it with chicken instead of lamb?

Although it seems like a hard dish, its pretty easy to make.  Most important is having Jameed, which is the dried yogurt (literally its dried into a hard ball).  You can buy liquid jameed or the rock from the local arabi shops...by the way, the whiter the rock is the better the taste is, something i picked up along the way.  You also need plain yogurt on hand.  We have always made ours with lamb, but ive heard it done with chicken.  Once you have those than you can continue with making it.  If you need more info-let me know, i didnt look at the link.

If you go to the Arabic store they have the luquid Jameed. It makes it way easier it also has directions on how to make on the side but just add yogurt at the end and let warm. I also always use lamb.

My mother-in-law makes it without jameed.  I don't like Mansaf with jameed.  I was REALLY glad she made this one when she came.  My hubby had made it before without it, but I just thought it was just a fast version that he threw together...turns out he did it right.  LOL  Without jameed is sooo good!

without jameed it would be a dairy free variety ;) a safe heaven for many people with casein and lactose intolerance :)
