eggplant..side dishes or in it?

I make baba ghanouj or birangan (sliced eggplant that is fried and then topped with a green pepper and garlic puree).  You could also make maashi (stuffed eggplant).

you can make ''msa'aah'' sorry I dont know how to correctly spell this in English, you slice the eggplants, fry or grill them, add tomato puree and minced meat; you can either put the whole mixture in an oven dish or just cook it in a sauce pan.

You can make roasted eggplant salad...I make this sometime..I cut the eggplant in cubes add some olive oil and roast them...I make a salad and grill some chicken and put it all 2gether with a lemon herb dressing. It is quick and easy. Other then that the only thing i make with eggplant is baba ghanouj
