1 c. Lentils
8 c, water
1/2 c. chickpeas,
1 c. ekbiw nacaribu ir 1/2 kb, flat noodles
1/2 lb. spinach chopped
1 large onion sliced
2 cloves fresh garlic, diced
1 c. fresh coriander chopped or 1 Tbsp. coriander seed
1/3 c. oil
Salt and pepper to taste
Rinse lentils. Place lentils and chickpeas in a large pot with teh 8 cups of water. cook until the lentils are almost tender. Add salt to taste.
Add teh elbows, or if you prefer the flat noodles broken in halves, and let cook on medium heat for 10 minutes. Add the chopped spinach and continue to cook. Stir occasionally.
In frying pan saute the sliced onions in the oil. When the onions are limp add the kiced garlic and coriander and continue frying until garlic edges just about turn brown (About 1 and a half minutes) Pour this mixture over teh lentils and stir continuously. Put heat on low and cook 5 more minutes.
Middle Eastern Chopped Salad
1 small cucumber, peeled, seeded, and diced.
2 ripe tomatoes peeled, seeded and roughly chopped
1/3 c. chopped parsley
1/3 c. shredded spearmint
1 clove garlic, peeled
salt to taste
1 tsp. finely chopped fresh green chili
1 to 2 Tbsp. fresh lemon juice
2 Tbsp. olive oil
In salad bowl, combine the cucumber tomatoes and herbs. In a mortar, crush the garlic wtih 1/4 teaspoon salt. add the chili, and pound to a smooth paste. Stir in the lemon juice then add the olive oil.. Taste for salt. pour over the vegetables and mix thoroughly. Cihll 1 to 2 hours before serveing.
1 large or 2 small loaves pita bread
1 head romaine lettuce
1 cucumber , peeled , quartered and sliced
1 small onion or 1 bunch of scallions chopped (I prefer the scallions)
1 clove garlic, crushed
1/4 c. olive oil
1/8 c. white vinegar
1/8 c. lemon juice
8 to 10 alfonso or calamatta olives
1 tsp. chopped parsley
1 tsp. crushed dried mint.
Salt and pepper to taste
Separate Pita bread and toast until light brown. Break into bite-size peices. Place in medium salad bowl. wash romaine lettuce and drain well. Break into bite-size peices. Add to the salad bowl. Cut cucumbers and onions (or scallions) and add.
Combine vinegar, lemon juice, oil and garlic and pour over vegetables. Add parsley, mint salt, and pepper. Toss well. Place on serveing platter or leave in bowl and garnish with olives.

FOOL IMDAMIS (fava bean salad)
1 can fava beans, drained
2 cloves garlic
1 small onion chopped
1 large tomato chopped
1 Tbsp chopped parsley
3 Tbsp. lemon juice
1 Tbsp. Olive oil
1 tsp. salt
1/2 tsp. black pepper.
comine all ingriedients in bowl and mix well, Refridgeerate until cool- serve with pita bread
2 medium cucumbers
1/2 tsp. salt
1 clove garlic, crushed
1 qt. laban
1 Tbsp. crushed dried mint
Peel cucumbers and dice. Place into a medium bowl and sprinkle with salt. Crush the garlic and stir into the yogurt wtih mint. Pour yogurt mixture over teh cucumbers and mix until well blended. Taste and add more seasoning if necessary. Garnish wtih a little more crushed mint when serveing.
1 large peeled and diced cucumber
1 finely sliced romiane lettuce
1 qt. yogurt.
1 bunch chopped scallions
2 cloves crushed garlic
1/2 bunch chopped parsley
1 Tbsp. crushed peppermint
salt to taste
Mix all dry ingredients well and add to yogurt. mix well. Refridgerate until cool. Serve wtih Ahjeh. *Syrian egg and parsley omelete and pita)
These are my Great grandmothers recipes that she put together for me before she died- Well we both did- some are from her church cookbook , and others I helped her translate since she never spoke english very well- I have plenty more if you need them lol- Jsut let me know!
