Ramadan Cooking

Greetings Ladies!  Taking a moment from the Ramadan cooking to drop a line.  I hope that everyone is fairing pretty well.  The cooking seems to take up a lot of my time,  and even though I am enjoying it,  I want to play on CafeMom more.  This year is starting off interesting with such foods as lamb's head, shoulders (knees and toes). LOL  But seriously...DH likes the lamb meat and during this time he prepares many dishes.  Unfortunately,  I do not eat lamb,  therefore we have two or more dishes to satisfy all which means a lot of cooking.  I have tried and used a lot of the tips, shortcuts, and receipes that I find among the group posts.  A little easier,  but still a lot of cooking and washing dishes.  Whew!  I'm hanging in there and I hope you do too!

My husband requested soup only alhamdolillah, therefore my cooking is reduced drastically. I really needed that because of my health issues. So I cook for kids mostly, & soup for us. We eat really little meat this time & no sweets & not too much pastry or anything heavy. I cannot believe the price of daes lately! I heard on CNN that in some muslim countries people cannot get regular basic Ramadan food on the table, like dates & other. Not talking luxury here, the report said really that this year is different because of the global food shortage. I was shocked & this made it for me - no luxury meals, only simple basic food, no wasting anything, no experiments when I do not know if what I'm making is eatable or not, etc. We keep it really simple this time.

I am doing good, my family and I... I have not cooked much either... dh is working like crazy.. I did cook for the masjid once.... My dh wanted beef stomach... as soon as I get the camera together I will post pics... I do not know what is wrong with it.... but it was not uploading the pics to my PC... I will try again soon.. I gave it a reat so I hope it works...

Did you ladies get lucky this year?  My husband works a lot and still come in wanting food!  We have a full course everyday!  Pray for me please!  lol

what, what is a lucky?  my husband works the same as yours and i am still cooking and having his platter ready 1am and 2 am when he gets in..........lol, lol

I was raised that during ramadan you have to have a full spread.  Everything from salad, to hummus, to the fried samosas, fatayer, meat, rice, bread---you get the idea, and soup of course. for the first time during ramadan, we were invited to some friends of my husbands (not many muslims here fast-shame).  anyway, they made dinner and here i was excitted. they were Moroccan.  I was expecting real Moroccan food.  Well, I was a bit dissappointed and jealous.  They dont make a huge spread for dinner, instead-its soup (never tried Hariri before-it was yummy) and some different types of samosas, dates, bread, cheese, honey, and olives, and of course the mint tea.  I was surprised that was all they made.  Lets just say when they came for dinner, I didnt get the luxury...hubby wanted the full spread-plus the harder fancier foods for company.  I have started preparing less food for when we break fast, because honestly-we really dont each that much (but you know the saying-our eyes are bigger than our mouths). 


*have you tried cooking the lamb with cloves?  Or with other spices like a little cinammon, or 7 spice, allspice?  it helps remove that lamb smell-if that is the reason why you dont each lamb?!?!  Just wondering.  I had some pakistani friends who hated the smell-thats why they never ate it, but they tried boiling the meat with the spices and tried it, they eat it now*

I know I have not done what I use to do.... I think this friday i will have the kids... (girls) shuayb may be sleeping... I will cook big and we will wait for him to eat at 2 am....lol, lol... go figure.... We will however break our fast and eat something but not as much so we can eat as a family...

I use to make chicken/hens stuffed with rice and meat, Hummos, sambusak, Meat pies like sambusak, Kefta, grape leaves, pickles, olives (green and black), 3dus, and a dif kind of aray of food here and there... like kusa, bezella or fasulliyah, Maklouba... flat beard... like this.... I want to even make a nice spread for dh to take to work one day... he can have some of the guys come and eat...insh'Allah...

it is so hard when they work like they do...

angel mini I think that I will try boiling/cooking the lamb with the spices.  That is also a neat idea.  I'm not going to make any promises for myself,  but I am always looking for ways that will make Honey smile.

That sounds good.... I think I will take pics of our dinner on Friday.. when we all stay up and wait for dh to come in and eat... the kids and I are making Ramadan decorations now... oooooo! Ya Allah I think it is going to be pretty.... I can not wait for you al to see it.... I hopt the pics will upload... and if they do not I will get them on a CD so I can up load them to my PC then insh'Allah...

Yes,  DH was raised like that too!  And he has that in smaller versions.  Now that we are nearing the end,  it wasn't so bad.  I think that in the beginning,  it was really just the breaking of routine.  As far as the lamb,  it could be me and a mental/mind thing.  I still plan to try it with the spices.
