Red Lentil Soup

Our most regular Ramadan soup:

4 cups water

1 cup red lentils

1 big onion

1 big tomato

1-2 cloves garlic

2 Tbsp parsley (or chives)

salt to taste, spices (cumin, pepper) to taste

- poor water in a cooking pan, put spices in, cover the pan & let it simmer on low heat.

- wash & rinse lentils, put into the pan & let them simmer on low heat.

- meanwhile chop onion & tomato, chop or press garlic, add all into the pan, remove the top & bring the veggies to a boil.

- when this happened, lower the heat, cover the pan & let the mix simmer till lentils slightly lose their integrity (you have to check it out from time to time, usually lasts 10-15 min)

- add parsley or chives & salt, stir & remove from the heat source.

    Thanks!  I think it was pretty good,  even with DH wanting the lentils more soupy.  I took pics,  and I will upload them soon.  You all inspire me so much this Ramadan!  I am glad we cook together!
