Okay, I have not tried this one yet.....I just havent had the time. But, it sounds yummy. My grandma used to make it-and of course she made it look so easy. But then again she would be in the kitchen all day to feed the large family. But, i got this off of a healthy eating email that i get. If you are adventurous and have the time-i recommend doing this. especially if you are craving Italian

Potato Gnocchi
4 Servings
Gnocchi (pronounced "nyo-kee" and derived from the German word for "knuckle") are tasty little dumplings, one of Italy's oldest pastas, dating back to the 12th century. Traditional ingredients vary from region to region, with recipes including potatoes, flour, semolina, ricotta cheese, spinach and even bread crumbs. My favorite base for gnocchi is the Idaho potato. Potatoes are packed with complex carbohydrates, plenty of potassium, vitamins C and B-6, and lots of great minerals. Potatoes convert to glucose in your body fairly quickly, triggering the release of insulin, which leads to increased levels of relaxing seratonin in your brain. When making gnocchi (a relaxing activity in itself), pinch each one to create an indentation, which holds the sauce. Immediately let it fall to the floured surface so you handle the gnocchi as little as possible. Cook them right away if you can. Toss the dumplings into the bubbling water and drink in the scented steam. They will emerge light and delectable.
Ingredients:
1 pound baking potatoes
1 3/4 cups unbleached white flour
1/2 teaspoon salt
Dash paprika
Dash grated nutmeg
2 tablespoons chopped fresh parsley
Instructions:
1. Peel the potatoes, cut in quarters, cover with cold water, bring to a boil, reduce heat, cover, and cook until tender. Drain and mash. You should have about 2 cups.
2. In a large mixing bowl, stir together the flour, salt, a few dashes of paprika and nutmeg, and the chopped parsley.
3. Add the warm potatoes and turn out onto a floured surface. Knead just until dough is well mixed and not sticky. Let rest for 15 minutes.
4. Roll chunks of dough on floured board into logs about 1 inch thick. Cut into diagonal slices about 3/4 inch thick. Roll each piece on fork for that gnocchi look
5. Bring a large pot of water to the boil. Add gnocchi. After they rise to the surface, lower the heat and simmer for 10 minutes, uncovered.
6. Drain well and cover with your favorite pasta sauce & sprinkle with cheese
*here is the same recipe but using sweet potatoes instead. My hubby hates sweet food where salty should be-and vice versa (needless to say im the only one who eats sweet and sour chicken or coconut shimp in my house) but it sounds yummy. if you like it and your man is cool with it....go for it. But i think you should probably use a different sauce.
2 pounds sweet potatoes, scrubbed
2 large eggs, beaten
1 1/2 t fleur de sel
2-3 cups flour (initial recipe says 2, I vote 3+)
freshly ground pepper
pinch of nutmeg
Gnoochi is so good........... they are like mini mini dumplings - I love them... my daughter doesnt care for them she doesnt like their texture - but if you get a chance try them, you can find them at Sam's club or any grocery store in the pasta section or International section.....
This sounds and looks so good...wow, I am so glad the sis said what the dumpling thing was and where to get it... TY to the both of you... I am trying to change my diet lowly but surely.... and this look like it will fit right in....
My Version Of Dirty Rice

You need:
1 onion peeled and diced
1Green Bell Pepper (diced)
1 Red Bell Pepper (diced
1-2 Boxes of Dirty Rice Mix (depending on size of family)
1/2-1 lb Ground Beef
1-1 1/2 Packs of Beef Kilbasa (sliced)
A pack of Shirmp Med - Large size (60 - 90+ count) Devained and peeled, may need 2 depending on the size of the family)
Now:
Add your onions and peppers in a Large stock pot, cook them down a little, add your ground beef, cook til brown and crombled (drain fat), add your beef Kilbassa pieces, cook through,
leave shrimp out for now. You will add it when the rice is almost done.
Add your rice and stir add the amount of water as directed on the box, put on med-medlo heat. simmer til almost done.
Almst done is when you have a little bit of water left in the post at the bottom, at this point you add your SHRIMP, stir in and mix, replace the lid, the steam and rest of water will cook them through.
when done put the Dirty Rice in a serving Platter to serve.
Serve with yogurt, sour cream, any salad version you like and avacado optional.

Enjoy!

Okay this might sound silly, but I'll tell ya anyway. I finally guilted hubby enough to buy one of those counter top ovens, when you have been without an oven for 4 months-its a huge deal. Since we got it I have used it everyday. The first days the kids were hankering for something sweet and well, we didnt have many ingredients in the house-but I found a recipe for NO EGG SUGAR COOKIES that came out pretty decent. I have never been able to make cookies (from scratch or even premade) they always came out flat and hard. But these came out really good-so I thought I would share....Inshallah enjoy!!

1 lb. butter
2 c. sugar 3 c. flour 1 tsp. soda 1 tsp. salt Cream together butter and sugar. Sift dry ingredients together and mix into creamed mixture. Roll into small balls and place on an ungreased cookie sheet. Press slightly with a fork dipped in sugar. Bake at 350 degrees for 8 to 10 minutes until lightly browned. ![]() ![]() ![]() |

by AzIzAzIzA on Nov. 29, 2008 at 5:51 PMoh yum yum....Turkey day :( my first year without having the meal with my family. They dont celebrate it here (obviously) but my friends and family swear they will have a spread waiting when I finally get to go visit. And pumpkin pie...they dont have those here either....and none of the processed canned goods (pumpkin in a can) that we love and are used to so much back in the States (LOL). Good you got to enjoy some. At least you were able to make such a wonderful and very tasty looking spread!! GREAT WORK!! Tell us how you made your deviled eggs!! -Salam- AzIzAzIzA *If you don't stand for something, then you will fall for anything* | |
You wrote on Nov. 30, 2008 at 12:17 AMasalamu alaikum awwwwwwwww yeah we dont celebrate it either, i just did it after the holiday cause i didnt want to celebrate on the day after reading the history of massacres of the indians i dont feel comfortable celebrating it either, also its not a islamic holiday ......but the turkeys are so cheap during this time of year i love turkey so when its on sell i make them.......
The Eggs Boil as many as you want i did a dozen makes 24 pieces Peel them and cut them in half put the yolk in a seperate bowl and the white egg on a plate the seperate bowl with yolks add mayonaise , black pepper, and mustard to taste and mash it with a spoon or a blender which ever u like i like a little consistancy not the blender creamy.. More mayonaise if you want it sweeter, and if you want a more bolder taste add more mustard i like inbetween Fill the egg with a spoonful ish
