  • Salam sisters...

This might sound wierd for you-or maybe some of your sisters have had this before.  I actually came across this on one of the other recipe groups I belong to.  My DH for some reason-when he goes food shopping gets these canned beans in tomato sauce-sort of like baked beans-but not as sweet.  Well they are popular here in Belgium (no idea why-never seen them in their cooking) anyway...long story short.  I keep trying to come up with new things and this turned out really yummy.  Sorry no pictures-my camera, cell phone and all are out of commission.  Here it is.

Chicken fried bean patties:  mash beans and add flour to make a stiff dough.  Form patties and roll in bread crumbs, crushed cornflakes, or panko crumbs.  Fry in oil until golden and crispy.  Use on burgers or serve pattie with brown gravy and mashed potatoes & green beans.

-make sure you drain your beans very well.  mash them and add some spices(i added simple salt, pepper, and garlic powder) and flour.  I actually dipped mine in flour since i was out of bread crumbs (then shaped them into patties) and then fried them.  DH and kids loved them.  We made them into little burgers (tomatoes-onions, ketchup, etc).  Not so much burger yet not so much falafel.  It was a nice twist to the same old.  And very easy to make.  Enough tooting my own horn here.  Inshallah you try for yourselves and see.

  • Vegetable Parmesean

Salam all you ladies out there.  Im sure you have all heard of EGGPLANT PARMESEAN, right?  The other day i really wanted to make some-but supplies were short and well im very preggo-so no energy or desire to run to the store....I made something else-which honestly...came out yummy

VEGETABLE PARMESEAN :) But my version had no parmesean...but its a similiar concept. and the way it ended up had an arab twist to it all :)

    Any veggies you have...I used:

    • Sliced eggplant
    • Sliced Zucchini
    • Sliced Mushrooms
    • Sliced Potatoes
    • shredded cheese (i used several varieties-here GOUDA is plentiful, and another kind that DH brought from store-no idea, but it was pre-shredded)
    • Cream cheese
    • Flour (for breading)
    • whatever you use as liquid to soak before breading (i used milk mixed with all my spices-salt, pepper, garlic, a lil hot pepper)
    • SAUCE (i usually make my own, i like it thick and chunky-but thats up to u)
    • salt / pepper / garlic powder
    • frying oil

    ----------------------------------------------------------------------------------------------------------------------------

(as I said its a pretty much make it up as you go along recipe-at least thats what i did)

    • I dipped my eggplant, zucchini, and potatoes in the milk, dipped in flour, redipped in the milk and final toss in the flour.
    • Next fry the breaded veggoes to; nice and golden.  they dont have to be cooked thru-because you are going to put them all in the over....
    • once fried, remove from oil and allow to drain on some paper towels

    Now-setting everything up....

    • in the over safe dish (i think they call it a casserole dish) ... place some sauce at the bottom, not too much...but enough to spread the entire bottom of pan.
    • -start layering...i placed potatoes down, because again i wasnt sure how this would turn out-and i didnt want my other veggies to burn or stick....
    • topped with some sliced onions (i had extra)
    • sliced mushrooms
    • break some pieces of cream cheese and top.  Add some shredded cheese, some sauce.
    • then i layers my zucchini
    • then eggplant
    • i topped with a few small pieces of cream cheese...some more sauce, shredded cheese....
    • I popped the whole thing in the oven until the cheese was nice and bubbley.

*dont put too much sauce, otherwise it will be too watery....just something to remember*

    • Once the cheese is nice and melty-brown the top a bit.....

-serve with a side of pasta and the left over sauce.

To me this was a mix between arabi and italian food (exactly what i am anyway) the family liked it.

I think it would be amazing with spinach, or feta cheese, or mozzerella, of course parmesean, or really anything you feel like.  Its once of those---you got some veggies that you dont want to go bad in the fridge, toss it in and it will be all yummified with the sauce and cheese :)

Ok, i normally cook much better, but again, im about to pop, being on my feet for long is nothing something i try to do....Inshallah (god willing) you give it a try and tell me what you think.  And what lil changes you make, post them :)
