A few Palestinian recipes

Salams, I have a friend who is from Gaza, lives in the states now after marriage. Anyway, she gave me these recipes they were her Grandmothers. Thought you all may like them.

Moz Wal Balah
5 bananas, sliced
1/2 pound dates, pitted
1-1/4 cups light cream

1. In a medium sized serving bowl make an arrangement mixture of the bananas and dates. Pour cream on top of mixture and chill for two hours before servings.

Yields: 5 servings


Spiced Mashed Sweet Potatoes with Raisins
2 pounds sweet potatoes, peeled and sliced
1 teaspoon salt
1 teaspoon pepper
6 teaspoons butter
1/2 teaspoon ginger, ground
1 teaspoon cinnamon
2 tablespoon raisin (soaked in water for 15 minutes)

1. In a 4-quart saucepan bring potatoes and salt to a full boil. Reduce heat to low and simmer for 20 minutes.

2. Drain potatoes and mash with a fork. Add butter, salt, pepper, ginger and cinnamon, mixing well. Add raisins on top.


Muhallabeya
3 tablespoons cornstarch
4 tablespoons rice flour
5 cups milk
1/2 cup sugar (divided)
1 tablespoon orange blossom or rose water
1/2 cup chopped almonds or pistachio’s


1.In a medium sized bowl mix cornstarch, rice flour and half of the milk, making sure to break up any lumps. In a 4-quart saucepan bring the rest of the milk to a boil then add cornstarch and rice flour mixture, stirring.

2. On low heat stir until mixture thickens. Cook on low heat for 15 minutes until the mixture thickens even more, stirring only occasionally.

3. Add sugar after at the end of the 15 minutes. Stir in orange-blossom/rose water, cook for one minute more. Let the pudding cool before pouring into a serving bowl. After the pudding has chilled add almonds or pistachios.

Alhumdulilah... I love Muhallabeya, mash'Allah I make it all the time for dh.. one of his favs......
