Bread baking issues

I am having serious issues with making bread! I am trying to make the pita bread and its just not working for me!
I cant get the bubble in the middle! It just stays flat and gets hard when I bake it. What am I doing wrong? Anyone know? I threw away 2 batches of bread today that I ruined!

  • Sis to get the bubble you have to have your oven REALLY REALLY hot. I suggest buying a pizza stone or using an unglazed tile to cook it on, they can handle the heat. Pre-heat your oven to 500F plus. Make sure its super hot and I take out the top rack and just have one ON THE BOTTOM so I can move fast and the heat does not get out... You will see the bubble I promise :)..

    Manuela your bread is not rising for one of two reasons. 1. You have to make sure you add warm water to it at the end, this activates the yeast. Cold water will make it not work and hot will kill it. Has to be pretty warm. You should see bubbles. is your yeast fresh? To test it add some and warm water and mix, if you do not see bubbles its dead trash it and get some more. You should store yeast in the fridge when you do not need it.

    2. your not letting it rise in a warm area. You must cover it and place the dough in a warm place. If your room is cool it will not rise. I have to take mine in my hall and place it on a chair to rise bc its a really warn place.

    Those are your problems fix those and I promise it will rise inshAllah :)

    I'm resurrecting this post because I will attempt to make pizza dough, inshallah, and I'm trying to get as much information as I can about making dough, flatbreads, etc.

    I noticed the tips above, and I'm wondering why this conflicts with a recipe by Wolfgang Puck on Food Network for making dough.  Here is what it says and note text in red:

    Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).

  • Sis ASALAMU ALAIKUM  i have a EASY PIZZA DOUGH ( and for pita bread go to arabic post on ur Zatar ? and aramli posted a recipe for syrian pita ITS SOOOOOO GOOD I MADE IT TOO SO EASY TO MAKE AND DELICIOUS

     

    as for pizza dough

    3 CUPS FLOUR

    1 PACKET YEAST

    1 CUP WARM WATER

    SALT

    -MIX YEAST IN WARM WATER FOR A MIN TIL LIKE A BROWNISH COLOR

    -ADD SLOWLY THE FLOUR AND SALT AND KNEAD TAKES MAYBE 2-3 MINS

    -WHEN DONE KNEADING PUT 1-2 TSPN OF OIL ON TOP AND COVER WITH DAMP CLOTH FOR 1 HOUR

     

    Last knead dough once more and flatten out on a pizza pan to ur desired thinness, i love thinner, so i go almost til it cant stretch no more.

    TOP W/UR SERVINGS

    COOK ON 500 DEGREES

     

    ****************BIG KEY TIP TO GET PIZZA DOUGH LIKE RESTAURANTS*******

    -RIGHT BEFORE THE PIZZAS DONE TAKE OFF OF PIZZA PAN RACK AND PLACE DIRECTLY ON OVEN RACK AND LET IT COOK AT LEAST 2 MINS TO 3 MINS IT'LL CRISP THE CRUST ON TOP AND BOTTOM JUST LIKE THE RESTAURANTS *****************

  • This funny do we all have the same thing on our minds? I usually go to the Arabic store and buy bread . We go once a week as it's close to my daughters school and we're lucky enough to have two stores that bake their own bread . But the bread has gotten really bad . It's almost 2 dollars for 4 pieces . (Isra I'd die if i had to pay 4 . lol) But the bread is hard on one side once it's re=heated . I buy what I can find after turning the whole basket of bread over and looking to make sure nothing is burnt or looks bad . I thought and even found a recipe on the net to make my own but after all these post and reading I think I'll just tell my husband -tough luck we're going to keep buying it . I thank all of you for posting your little tricks of the trade here though . Perhaps one day I'll give it a try .

    go on the post that has Zatar ?   from sis ummmousa   on it on the second page is a pita bread sis aramli posted and i made it a couple times ITS SOOOOOOOOOOOOOOOOOOOOO FREAKING DELICIOUS  i posted pics too of it, and u'll never have to buy again its super freaking duper easy to make mix a few things let it rise and then bake so easy you can do it dont give up and soooooo cheap to make

  • Thanks sister . It does look so easy so I'll give it a try this weekend . Today as a matte of fact . Can't hurt to try just once . If I can't do it then I'll guess we'll have the choice of buying Arabic bread or just eating tortillas . LOL   Thanks again -wish me luck.
