I love this spice mixture!  I use it on bread all the time after a Syrian friend of mine introduced me to it a few years ago.  Does anyone have any other suggestions of how to use it?  I would love to hear new ways to use it!  Thanks!

    Za'tar is made from oregano, sesame seeds, and Sumac.

    you can mix it with olive oil and spread it on top of dough, flat bread, pizza crust,  or biscuit.. and bake it in the oven.

    you can also add it to your cream cheese or labneh sandwich

    one of my favorite "creations"  is cutting tortilla bread into short thin strips ( like french fries sized) then fry in canola oil until golden ( very fast)  when you take out of the oil to place it on the napkin. sprinkle it with za'atar and shake.  I call these Za'tar crunchies smile. they are always a big hit at our community's breakfasts or lunches.. LOL.

  • My husband is from Lebanon, and the way he eats zataar (unless it comes on a zataar pie) is to mix it with olive oil, spread it on an open half of khubus (pita), add wedges of tomato in a straight line down the center of the bread, add some fresh mint leaves, roll it up and eat it as a sandwich.  Mmmm, yummy!  Zataar is one of my favorites!

  • hmmmmmm, making me really crave zaatar now :).  We also make pita chips-just left over pita bread drizzled with EVOO and sprikled with zaatar and baked until crispy.  Also we make the (OMG I CANT REMEMBER THE NAMES....darn preggo amnesia)...MANA'EESH....like sfeeha, flattened rolled out dough topped with EVOO and Zaatar...baked.  Those are so yummy with a hot cup of tea!!  Ok...Now i have to go drive to another city to get some more...great!! Just kidding....Enjoy ur Zaatar!!

  • Thanks for all your ideas, ladies!  Everything sounds very yummy.  I love making pita chips.  In fact, they're always a hit at parties!

    I googled "zaatar recipes" and came across other ideas.  Try tossing popped popcorn with EVOO and zaatar.  Here are some other recipes that I found online:

    Roasted Carrot and Feta Salad with Za'Atar

    Ingredients

    • 2 1/2 pounds carrots, peeled and quartered lengthwise
    • 2 tablespoons olive oil
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon black pepper
    • 3/4 cups crumbled feta cheese
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon za'atar, or more to taste
    • 1/4 cup chopped parsley or cilantro leaves

    Directions

    Preheat oven to 425 degrees. To roast carrots, place the carrots, olive oil, salt and pepper on a baking sheet, toss well and transfer to the oven. Roast, shaking occasionally until they are just beginning to brown, about 30 minutes. The carrots should be firm and not mushy. When they are cool enough to handle, cut the carrots in angled 1-inch slices. Transfer to a serving bowl. Add the remaining ingredients and toss well. Serve immediately or cover and refrigerate up to 4 days.

    Za'atar Chicken from Nigella Lawson

    You buy a whole chicken, cut up into pieces, and then marinate them in ziploc bags overnight with olive oil, a generous amount of Za'atar, salt and pepper. Basically you put the chicken pieces in first (you probably need two large freezer Ziploc bags), add the oil to coat, and then the Za'atar to coat. You can also marinate for a few hours, but the longer the better!

    Afterwards, dump the bags of chicken out into a baking dish and make sure to squeeze out the seeds and oil on top. You can add some more seasoning if some sides of the chicken pieces are bare. Pop the dish into pre-heated oven and roast at 425 degrees for 40 minutes or so, and the outside will be crispy delicious while the meat tender and tasty.

  • Wow this chicken and zatar sounds great.....I'm going to give it a try day after tomorrow inshaa Allah my chickens are frozen so I"ll take them out tomorrow and marinate them for the following day inshaa Allah....wish me luck girls....I'll let you know how it turns out inshaa Allah

  • Asalam walaikum ladies well I did it I made the chicken with the zatar and I also made the carot and zatar salad here are a few pics of what it looked like please forgive the quality of the pics but I had to  use my cell phone to take the pictures since I don't have a digital anymore.


    Ok so here is the chicken I will admitt I tweeked it a bit because I didn't cut it up into pieces I just soaked it in olive oil for about an hour and then added the zatar, salt and pepper all over it and rubbed it in I sat it in a covered bowl over night in the fridge and I baked it as directed ...OMG it was really really good the flavor was delish, and it was so easy to prepare, I'm definitely giving this a thumbs up,,,,,Thanks for the instructions dear


    Ok so here is the salad I followed the directions acordingly, I baked the carrots for 26 minutes and that was perfect for my oven the carots were delish even before mixing all of the other ingredients together, now the only difference is that I used the feta cheese which comes with garlic and herbs mixed in also I used half cilantro (cause I love cilantro) and half Italian parsley (cause husband loves Italian parsley) the flavor was amazing I suggest everyone try this I'm serious this was a great dish another simple easy recipe and what is best the children all ate it no one turned it away they loved it and when I baked the carrots I couldn't keep them away from the carrots as I was cooling them so I'm thinking that the baked carrots in olive oil, salt and pepper would make a perfect after school snack as well



    this pic is a bit blurry but It is basically basmatti rice with fideo noodles and corn, what I did was sautee a bit of fideo noodles in oil till they are light brown in color (not too dark) (about 1/4 to 1/2 cup) and add 2 cups of riceand sautee it for about 2 more minutes then I add a can of corn including the water (1 can for every 2 cups of rice) then add 3 cups of water and salt to taste, stir it all together well and cook it as you would any other rice, this has a great flavor to it

    I also made homemade syrian bread and this was it, a great dinner, hope you all get a chance to make it for yourselves, again I would like to thank you for your zatar suggestions we all really enjoyed it here at home.......Asalam walaikum to all

    I know how to do the Pita... is it the same way... I think I will just have to roll it thiner... insh'Allah you can help me

    its basically the same as pita,

    3 cups flour (I use bread flour)

    1 1/2 tsp salt

    3/4 tsp sugar

    mix well and then add

    1 1/2 tsp yeast

    mix well again and then add

    1 1/4 cup water

    2 TB oil (vegetable)

    knead for about 10-15 min

    the dough will be a bit sticky but don't worry

    rub a bit of olive oil on the dough ball and place in a bowl cover it with a towel and place in a warm place for about an hour

    knead the dough out again over a slightly floured surface, cut into 8 pieces and make balls out of them and set aside for about 5 min

    roll them out to about 6 - 8 inch rounds and bake on a pizza stone slightly floured with corn meal at 475 to 500 (depending on the oven) for about 5 min till they show some browning......you can pop them later in the toaster oven if you want to save them for a later time

    just play with it for a few time till you get it the way you want it

    I use this recipe for pita bread, naan bread and pizza dough also for the spinach pies just poke tiny wholes in the dough with a fork once you roll it out for naan, pizza dough and spinach pie dough if you don't poke wholes the dough will rise like pita bread
