I know a bunch of us are doing our best to stretch our budgets so I thought this might be a helpful thread.  Please add your cheapie recipes, under 5 dollars but will feed at least 4.

Spaghetti:
Pasta-$1
Jar of Sauce $2
Bread- $.99
Garlic-$.79
Butter

Tuna fish and noodles
Tuna 2 cans $1.80
Elbow Mac $1.25
Milk
Miracle Whip
Sugar
Red Wine Vinegar

Cook noodles, mix with tuna, add about 1 cup miracle whip, 1 tsp red wine vinegar, 2 Tb milk and 2 Tb sugar, mix and pour over pasta and noodles.  Great with hard boiled eggs.

Arroz con pollo
Dark meat chicken on bone $3
Tomato sauce (2 small cans) $1
Rice $1
Oil
Salt
Chicken Seasoning

Boil chicken in water til cooked, keep water.  Shred chicken.  Brown rice in oil in frying pan, add chicken, broth, tomato sauce, remembering roughly 2 cups water to 1 cup rice ratio.  Simmer til rice is cooked.

Quesadillas
Tortillas-$2
Cheese-$3

Shred the cheese, put it on tortilla, cook either in the oven or in a pan on the stove.

Fried Tacos
Corn tortillas-$2
Refried Beans-$1.5
Cheese-$1.5
Oil

Put a small spoonful of beans or cheese on one side of the corn tortilla, fold in half.  Heat oil in a pan, place tortilla in pan, turning after about 3 mins.

Money Saving Tips

I buy the frozen pre cut onion, green peppers etc at Kroger.  After I open the bag, I use what I need then put the open bags in a ziplock bag to be used the next time.

With the arroz one, put the tomato sauce first then the broth. Also, if u have any frozen veggies, onion, garlic, or umin, throw that in too. Yummy! Thanks for these :)
