Food tip of the day: don't be afraid to buy a whole chicken. Learn how to break it down. You can roast/cook it whole, rub some butter on it, the seasoning of your choice, put it in a roasting pan on top of some onions and cook it. If you end up with lots of leftovers, that's great! Take that left over chicken and stick it in a pot to slow cook the meat off the bone. This enables you to make various other chicken dishes like enchiladas, or shredded chicken beans and rice, soup, and many other dishes. Keep your bones! As the chicken cooks off the bones, take the bones off and place them on a sheet pan, spread them out, and let the bones get dry. You can roast the bones in the oven and make a nice fresh stock, which can be the base for soups, homemade sauces, and marinades. If you leave a lil meat or fat on the bones, you can make a nice broth. This is what our grandparents (and even some of our parents) used to do. It's easy and will save you money! I've always wanted to do this, but I get cold feet and worry I'll end up having to toss most of it out. Thanks for all the tips!

No problem! Glad I could help/inspire. Once I started doing it, I got into it. I roasted a chicken on sunday (super bowl) with some butter, jerk spice blend, garlic and onions. Well, it's just me and my 4yr old girl so I ended up w/tons of chicken. Today, I tossed it in a pot to cook the meat off and tomorrow I'm going to make chicken tacos. I saved my bones, and I'll be making a stock as well. I did one for my mom a couple months back when she broke her ankle.
