Chicken with Sun-Dried Tomatoes

Prep: 10 mins, Cook: 20 mins, Makes 4 servings

3 tablespoons olive oil, divided
4 boneless, skinless chicken breast halves
1 shallot, finely chopped
1 can (10 3/4 ounces) condensed cream of mushroom soup
3/4 cup water
1/4 cup thinly sliced sun-dried tomatoes
1 tablespoon red wine vinegar
2 tablespoons chopped fresh basil leaves
4 cups extra wide egg noodles, cooked and drained
1/4 cup shredded pecorino romano or parmesan cheese

Heat 2 tablespoons oil in 10" skillet over medium-high heat.
add chicken and cook 10 minutes or until well browned on both sides.
Remove chicken from skillet.
Heat remaining oil in skillet over medium heat.
Add shallot and cook and stir 2 minutes.
Stir soup, water, tomatoes, vinegar and basil to skillet.
Return chicken to skillet and heat to a boil.
Reduce heat to low.
Cook 5 minutes or until chicken is cooked through.
Serve chicken and sauce over noodles.
Sprinkle with cheese.

Spice-Rubbed Chicken with Black Bean Salsa
Prep: 15 mins, Cook: 15 mins, Makes 4 servings

1 large tomato, diced
1/2 cup diced cucumber
1/2 cup diced yellow bell pepper
1/2 cup diced red onion
1 (15 ounce) can black beans, rinsed and drained
3 tablespoons finely chopped fresh cilantro
1 lime, juiced
salt and pepper, to taste

4 (5- to 6-ounces) boneless, skinless chicken breasts
olive oil
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 teaspoon cocoa powder
1/4 teaspoon cinnamon
1/4 teaspoon cayenne

Combine tomato, cucumber, bell pepper, onion, beans, cilantro and lime juice.
Season with salt and pepper; set salsa aside.
Preheat grill to medium (300F to 350F).
Combine chili powder, garlic powder, paprika, cumin, cocoa powder, cinnamon, and cayenne to make dry rub.
Brush chicken lightly with oil.
Rub chicken with dry rub mix.
Place chicken on grill and cook for 6 to 8 minutes per side or until the internal temperature reaches 165F.
Serve with black bean salsa.

Asian Chicken Wrap

Prep: 30 mins, makes 4 servings

1 1/2 cups thinly sliced Chinese cabbage
1 1/2 cups thinly sliced iceberg lettuce
1 cup bean sprouts
1 medium bell pepper, sliced into strips
1/2 cup light ginger salad dressing
2 teaspoons soy sauce
4 (10 inch) flour tortillas
1 1/2 pounds boneless, skinless chicken breasts, grilled

In a large bowl, combine Chinese cabbage, lettuce, bean sprouts, bell peppers, salad dressing and soy sauce.
Toss together, mixing well.
Place vegetable mixture across center of each tortilla to within 1 inch from the edge.
Thinly slice chicken breasts and arrange slices on top of vegetable mixture.
Fold 1 side of tortilla over filling and roll tightly.

Greek Lamb Pilaf

Prep/cook time: 38 mins, Serves 4

2 1/2 cups chopped onion (about 1 large onion)
3/4 cup chopped carrot (about 1 carrot)
3 garlic cloves, minced
3/4 pounds ground lamb OR beef
1 cup uncooked long grain rice
1/4 teaspoon ground cinnamon
1 can (14 ounces) chicken broth
1 cup chopped plum tomato (about 1 tomato)
1/4 cup chopped fresh flat-leaf parsley, divided
2 tablespoons chopped fresh mint
3 tablespoons fresh lemon juice
3/4 teaspoon

Heat a large nonstick skillet over medium-high heat.
Add onion, carrot, garlic and meat to pan; cook 5 minutes, stirring to crumble meat.
Stir in rice and cinnamon; saute 2 minutes.
Stir in chicken broth; bring to boil.
Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
Remove from heat; stir in chopped tomato, 3 tablespoons parsley, mint, lemon juice and salt.
Cover and let stand 5 minutes.
Sprinkle with remaining 1 tablespoon parsley.

Tortilla Pizza

Cook: 7 mins, Serves 2

2 whole wheat tortillas
2 tablespoons tomato paste
1/2 teaspoon Italian seasoning
1 tomato, thinly sliced
2 teaspoons mozzarella cheese, shredded

Preheat oven to 425F.
Pierce tortillas with a knife and place on a baking sheet.
Bake for 2 minutes of until crisp.
Spread tomato paste evenly on both tortillas.
Sprinkle with Italian seasoning.
Add a layer of tomatoes and mozzarella cheese.
Bake 5 minutes or until cheese has melted.

Taco soup

1 lb hamburger

1 can chili beans

1 can diced tomatoes seasoned for chili

1 can tomato sauce

Brown the hamburger, then add the canned ingredients, 1 tbsp chili powder, s/p to taste. can add a little hot sauce if you like spice.

Simmer for 30 minutes and serve topped with Frito's and shredded cheese

I love wraps and roll ups.

Tortillas are so flexible with what you can fill them with and they are always so yummy baked for a while in the oven.  You can use left over turkey, ham, chicken.. add some cheese, add some cream of whatever soup or sour cream, or cream cheese blend.. even add left over rice or beans and you have a fast easy meal.

 Plain ole banana - eat by itself, cut up and put in a blender to make a smoothie, or cut-up putting in cereal or any other variety of foods.

breakfast for that leftover chicken:

Creamy Chilaquiles

prep/cook time: 15 mins, Serves 6

1 1/2 cups salsa
2 cups shredded cooked chicken
3 cups coarsely crushed tortilla chips
1 1/2 cups shredded queso quesadilla cheese
3/4 cup sour cream

Cook salsa and chicken in large skillet on medium heat 2 to 3 minutes or until heated through, stirring frequently.
Stir in crushed chips; top with cheese.
cover; cook on medium-low heat 3 minutes or until cheese is melted.
Serve topped with sour cream.
