Quick & Easy Meals Challenge - Day 5: Fried Rice (Vegetarian, or Not)

Welcome to day 5 of the Quick & Easy Meals Challenge!  This recipe is so quick and easy to make!  Add any meat if want something a little more hardy.

Fried Rice

Ingredients
3 large eggs, lightly beaten
2 c. frozen veggies (I like peas & carrots)
3 c. cooked white rice
1/4 c. soy sauce


Directions
Spray large skillet with cooking spray.  Add eggs and scramble eggs on medium heat.  Remove from skillet and set aside.

Recoat same skillet with cooking spray.  Add veggies and cook for about 5 minutes or until veggies are hot throughout.

Stir in rice & soy sauce.  Mix well.  Gently stir in eggs (if adding cooked meat, now is the time to add it). 

Serve with desired sides.

That looks easy! I haven't made my own fried rice before.

I like fried rice ok....I only eat Asian food when I'm craving it tho

So easy!  It really took me about ten minutes to make the whole thing (minus the chicken that I'd added, but that only took 5 minutes extra since I cut it into bite sized pieces before cooking it).

Me too and even better so do my kids!  Even my teenager who hates peas ate 2nds and ate all of the peas without complaint!

Sounds like supper for tonight. Minus the eggs. I hate eggs with rice. I avoid all Thai or Chinese dishes that include egg in the rice. Egg is breakfast, rice is supper. they don't mix.

I think it would be just as good without the egg, though I do love eggs for dinner somtimes. :)
