Quick & Easy Meals Challenge - Day 5: Fried Rice (Vegetarian, or Not)
Welcome to day 5 of the Quick & Easy Meals Challenge! This recipe is so quick and easy to make! Add any meat if want something a little more hardy.
3 large eggs, lightly beaten
2 c. frozen veggies (I like peas & carrots)
3 c. cooked white rice
1/4 c. soy sauce
Spray large skillet with cooking spray. Add eggs and scramble eggs on medium heat. Remove from skillet and set aside.
Recoat same skillet with cooking spray. Add veggies and cook for about 5 minutes or until veggies are hot throughout.
Stir in rice & soy sauce. Mix well. Gently stir in eggs (if adding cooked meat, now is the time to add it).
Serve with desired sides.
