Quick & Easy Meals Challenge - Day 4: Meatball Sub Casserole-BONUS DAY

Welcome to Day 4 of the Quick & Easy Meals Challenge.  Today we're taking a traditional meatball sandwich and turning it into a casserole to delight! 

Meatball Sub Casserole

Ingredients:
1 loaf of Italian (or French) bread, cut into one-inch thick slices
8 oz package cream cheese, softened
1/2 c. mayonaise
1 tsp. Italian seasoning
1/4 tsp. pepper
2 c. shredded mozzarella cheese, divided
1 lb package frozen meatballs, thawed
28 oz jar pasta sauce
1 c. water
 

Directions:
Arrange bread slices in a single layer in an ungreased 13"x9" baking pan; set aside.

In a bowl, combine cream cheese, mayonnaise and seasonings; spread over bread slices.  Sprinkle with 1/2 cup cheese; set aside.

Gently mix together meatballs, spaghetti sauce and water; spoon over cheese. Sprinkle with remaining cheese.

Bake, uncovered, at 350 degrees for 30 minutes.

Wow, that's a lot of cheese!  Otherwise it sounds really good.

I lovvvvve that much cheesy yumminess......and I use both frozen meatballs and jar.sauce all the time. Its much easier for me

 What can I use instaed of cream cheese?  Sour cream maybe?

Ooh the kids and I would love it but hubby hates cheese....I guess I can make it when he's not home lol

It was a lot of cheese.  Next time I'll probably use half as much cream cheese.

It made for amazing leftovers though!

It was so easy!  

I make a homemade sauce, but sometimes use jarred sauces.  When I made this I used a sweet basil sauce that was really good.

Maybe ricotta or cottage cheese.  I don't think sour cream would give it the same taste.

Or maybe just skip that part and use extra mozzarella instead?
