Welcome to Day 1 of the Quick & Easy Meals Challenge. Today's offering is a delicious "breakfast" for dinner meal that is simple & healthy!
Sausage & Mushroom Pie
1 lb sausage (I use Italian pork sausage, but turkey sausage would be fine too)
8 oz package sliced mushrooms
1 c. milk
1 c. cheese (any flavor)
1 ready to bake pie crust, softened
Optional: additional vegetables of choice
Preheat oven to 450 degrees.
Spread pie crust into pie plate and prebake for about 10 minutes.
Brown sausage and mushrooms together in skillet until sausage is done. Mushrooms will shrink as they cook. Place sausage mixture over pie crust. Sprinkle cheese over mixture.
Beat eggs, add milk and mix. Pour over pie.
Bake for about 25 minutes or until knife inserted in center comes out clean.
