Quick & Easy Meals Challenge - Day 1: Sausage and Mushroom Pie

Welcome to Day 1 of the Quick & Easy Meals Challenge.  Today's offering is a delicious "breakfast" for dinner meal that is simple & healthy!

Sausage & Mushroom Pie

Ingredients:
1 lb sausage (I use Italian pork sausage, but turkey sausage would be fine too) 
8 oz package sliced mushrooms
3 eggs
1 c. milk
1 c. cheese (any flavor)
1 ready to bake pie crust, softened
Optional: additional vegetables of choice 


Directions:
Preheat oven to 450 degrees.

Spread pie crust into pie plate and prebake for about 10 minutes.

Brown sausage and mushrooms together in skillet until sausage is done.  Mushrooms will shrink as they cook.  Place sausage mixture over pie crust.  Sprinkle cheese over mixture.

Beat eggs, add milk and mix.  Pour over pie. 

Bake for about 25 minutes or until knife inserted in center comes out clean.

Oh and my son loves having breakfast for supper, especially if its pancakes & bacon.  Lol actually any meal that involves bacon he loves.

Is this something you'd make using other vegetables than mushrooms?  I've made it with green peppers and onions before.

We love breakfast for dinner as well and my son is a bacon-holic!  lol

Do you do anything special to your pancakes?

Normally they are just plain buttermilk pancakes.  Sometimes I'll make pumpkin ones, or add chocolate chips or blueberries to them though.

Veggies aren't a breakfast food. Fruit is.

I love breakfast all the time. I've been a breakfast chef for a very long time. stuffed biscuits and gravy, buckwheat or whole wheat pancakes, and eggs benedict (done other ways then just traditional). 

Dinner waffles:

Prepare waffle batter according to the box

sautee peppers, onions, bacon, mushrooms, ham, crispy hashbrowns (frozen is best for this) 

poor waffle batter into waffle maker, add all your sauteed stuff cook according to directions

top with eggs the way you like them

Chipotle maple syrup

canned chipotle peppers and maple syrup blended together and warmed.
