It’s time to begin to make the sweet treats that always bring smiles to young and old at Christmastime. I haven’t made these in a couple of years but remember what a hit they were. These are really easy to make but require a little attention as you approach the high heat point. We wrapped them in pieces of parchment paper; but this year I found some candy wrappers that will add a festive look to the caramels.
Fleur De Sel Caramels
|0.25||cup||corn syrup, light|
|1.5||tsp||fleur de sel , sea salt|
Line the bottom of an 8 X 8 baking pan with parchment paper; brush
lightly with vegetable oil. In a large, heavy pot combine the sugar,
corn syrup, and ½ cup of water; heat to a boil over med-high heat.
Continue until the caramel is a golden color. Don’t stir; swirl the pan
Add the cream, butter and all but ½ tsp of the salt to a separate pot and simmer over medium heat. Remove from heat and set aside.
When to caramel is a rich brown ( careful not to get it too dark) add the cream mixture. Use caution as it will boil up. Stir in the vanilla with a wooden spoon and cook on medium for 5 -10 minutes; until 248 on a candy thermometer. Carefully pour into the prepared baking pan and refrigerate until firm; sprinkle remaining salt on top.
Cut candy into 1 x 1 pieces, wrap in parchment paper and store in frig.
