Walter Raymond's Sweet and Sour Cucumbers

We were back in NJ last week and of course we had several dinner parties.  One night I decided on a German theme and made pork schnitzel, spaetzle and gingered carrots.  Instead of a salad I chose these cucumbers that are both tangy and a little sweet, the perfect accompaniment for the pork.  I thought I made plenty but when I looked up they were all gone.

These are very easy to make but should be made in advance, maybe a couple of hours, to allow them to absorb the flavor. P.S. Walter Raymond was my grandfather-in-law and these were his favorites.

2 large cucumbers, sliced
1.5 cup sugar, granulated
1.5 cup vinegar, cider
2 Tb onions, sliced
1 pinch salt and pepper to taste

Cut cucumbers into thin slices. Dissolve sugar in vinegar on low heat. Thinly slice red onion. Add cucumbers, onions and liquid in a bowl and let marinate for 1 hour. Salt and Pepper to taste.
