Weight Watchers Garden Vegetable Soup

  • 2/3 cup sliced carrot
  • 1/2 cup diced onion
  • 2 garlic cloves
  • 3 cup broth (beef, chicken, or vegetable)
  • 1 1/2 cup diced green cabbage
  • 1/2 cup green beans
  • 1 Tbsp. tomato paste
  • 1/2 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/2 cup diced zucchini

1. In a large saucepan, sprayed with nonstick cooking spray, saute carrot, onion, and garlic over low heat until softened, about 5 minutes.

2. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer, covered about 15 minutes or until beans are tender.

3. Stir in zucchini and heat 3-4 minutes. Serve hot.

We've been eatting a lot of baked chicken and wild rice lately.

with the chicken I will take some chicken broth and pour it over the chicken breast.  Then I take some lemon pepper and put that on top.  It's really good that way.  Every once in awhile I'll add some dill or season salt to.

The wild rice I put in the frying pan with some chicken broth and fry it up that way.  No oil or anything.  Little pit of pepper and sometimes some lemon juice.

Here is my recipe for my favorite lunch, sometimes I eat it for breakfast very filling due to all the fiber.

Tuna quesadillas

1 can of tuna in water drained

tablespoon and 1/2 of fat free mayo

salt, pepper

chopped onions and jalapenos (optional)

Slice of any low fat cheese (I use pepper jack)

High fiber tortillas ( I get mine at kroger they have 12 grams of fiber and 1 gram of fat)

fresh spinach leafs and tomatoes (optional)

mix tuna with seasonings and chopped veggies and mayo spread on 1/2 of tortilla, add cheese, you can add spinach and tomato before or after cooking, fry on med high heat on each side till lightly browned cut in 1/2 and enjoy!
